My wife and I bake her sourdough bread in the earthen oven (made of clay, sand and straw, in the forest beside the log cabin.
This was before I figured out the heat issues with the clay oven, so we baked four loaves - two 50% wholewheat and 50% white flour and two 100% whole wheat - by keeping the wooden door open and feeding the fire to keep it burning hot enough to get the inside temperature up around 500 degrees.

Could almost smell the fresh baked bread! Nothing beats it. My mother used to make bread when I was young and I could smell it walking up the driveway after school. Wow, the memories... Thanks for that

Hey sir. Thank you for your videos I'm 32 year old man. With a wife and two kids. Doing pretty good in life as a plumber. But both my parents died when I was yonger and it's hard to admit but finding someone for advice about life even at 32 years old there's things I haven't experienced and my father left my life early and every day I wish I could ask him for his knowledge. That being said I've been watching your Channel for about a year now. And I know you don't talk to much which I respect but when you do talk it helps and teaches me things I havnt thought about. Fresh bread is soooo good! I think you are turning everyone who wasn't already a breadmaker, into breadmakers, which is a good thing! Fresh out of the oven, let butter melt on a slice, and enjoy. Thanks for your videos and congrats on the fantastic bread. Wanted to add my two cents worth of thoughts and experience. I have a large (52" inside measurement) deck oven built by a chef friend in my backyard. We used it to bake bread (made bread for our local farmers market), pizza and other things. My experience has been it takes a lot of wood and time (1-2 hours) to get it hot (mine has literal tons of bricks, mortar, concrete and rebar) and lack of insulation causes it to cool quickly. We built the floor of the oven with refractory bricks that hold heat in a good way. The thermal mass is essential to retaining heat but it requires insulation to keep it hot. I tried building a fire, getting oven hot, raking out the coals, loading with bread and then watch the temp plummet. I ended up figuring out ways to bake with fire in the back of the oven. It required shielding bread from heat on one side and regular rotations of bread so it would not burn.Using cast iron like you did in this video has similar result. People doing commercial baking with wood have two things I do not: a well insulated oven and baking everyday so the oven never gets cold. We were baking once a week. Wood fired pizza restaurants always have plenty of fire and I've found I have to add wood to the back to get the toppings on my pizza to adequately cook and the cheese to brown. Just requires rotation to keep from burning. We switched to using our electric ovens for baking bread mainly because splitting the wood (live oak) was giving me tendonitis and can heat the ovens in ten minutes instead of two hours, no wood splitting. And the bread was better. Pizza is better with wood as the fats hold some of the smoke flavor. I still use the oven for pizza parties but when not in use I keep plastic on it so rain does not get in. Heating and cooling cycles have created some cracks and I live in central Florida where we get heavy rains. I want to build a shelter over it like you have and blanket the oven inside and under so it can hold the heat better. Cheers!

For those who don't know what that weird-looking cup-and-plate thing is that he's getting the butter out of, that's called a butter bell. There's a bigger cup or crock that it sits upside down in. You pack butter into the smaller cup to just below the rim, put at most an inch of clean, cool water into the bigger cup, invert the butter cup into the water cup, and the "plate" or rim keeps out dust, while the water simultaneously keeps out air and keeps the crock cooler than room temperature...but it keeps the butter warmer than fridge temperature, so it's still spreadable. One caveat: do NOT mix "butter" types in one of those. The spreadable olive/canola oil, sea salt, & cream style "butter" will melt at a much lower temperature, and you'll get chunks of butter floating in your water. (It's still good, but it'll have water on it when you fish it out, and that could make your toast or whatever soggy. Also, greasy fingers if you don't think about using a spoon.) Margarine is also not good to mix with butter...for many, many reasons...

Thank you for the hurricane comments. Here in Greenville NC, we were lucky, but starting 30 miles east and 45 miles south, the water was pushed back up river and the flooding is really bad. Unfortunately this is usually the time when the news gets rough about people. The good thing is everyone comes together and helps each other out best they can. I have one of those Lodge pans... 3 in one, dutch oven with lid on, fry pan using the lid, and deep skillet using the lower. It is the most used cookware item in my collection.

Hello from South Carolina. I’m 60 or so miles inland. We saw little impact from hurricane Florence as we were on the South side of storm. We prepared by stocking water and purchased a 5-hour power pack from Office Depot. Also non perishables like soup and meals in cans. Also made sure we had can OPENER. although we didn’t need any of this it was good to be prepared. Praises to God as who else could of protected us from such storm. Looking forward to seeing the bathhouse come together.

Thank you for acknowledging what's going on here in NC. Two interstate highways closed due to flooding. Widespread flooding due to the unrelenting rain, especially in central to SE parts of the state. Eleven deaths reported so far. Rain is be be ending tomorrow, we hope. Almost a week of wind and rain. You are so right about "Self Reliance". I remember, well, Hurricane Hazel in 1954. And several other major ones, since then. Remember, too, how different our world was in 1954 when compared to today. In my rural area, people routinely did many of the things you're doing today. Or, at least the SE USA version with our much warmer winters. For example, I was born on a PRE-grid farm. Remember my Mother cooking on a cast iron wood burning kitchen range. Hot water reservoir on the side, oven in the center, and a "warming closet" over the back "eyes". While I live in a "modern" grid-tied home with a thermostat on the wall, have many of the commodities that made the lifestyle of my parents possible. Her oil lamp sits on our dinning room table. The decorations in our utility room are working versions of washboards. Her castiron washpot is outback. Have a woodstove in my shop. That's just a few of the long list of things from my childhood that we have around us today. Along with the applicable supplies and know-how to use them. That's one of the several reasons why I enjoy your videos. We didn't live in a self-built log cabin, when I was a kid. Yet, so many of the basic principles are the same. Your journey often brings back memories from those years long ago. Sometimes the hardships and work ethic it took on a daily basis. More often, pleasant memories, of simple things, that frequently turn out to be the best to treasure. Hot buttered biscuits from Mama's oven...... Thank you for sharing your journey.

Interesting reply. Speaks volumes about yourself and your understanding of what the very title of this channel is all about. If the world was always full of good news and prosperity there would be little need to teach others the arts of independence, self-reliance, and even "survival" regardless of our physical surroundings. BTW, hot buttered homemade biscuits are good news, whether baked in a modern convection oven, a Colman camp oven, or in a DIY tin can oven over a campfire in the great outdoors. Don't have the tin cans, fry bread (same ingredients) is GOOD NEWS whether cooked on a sandbar in a river or over a can of Steno, in high rise apartment, when a storm has taken down the grid.

Thank you Dan. We were blessed, based on our location in NC. No material damage from wind or water. Didn't lose power. Sadly, can't say the same for many that are not far from us. Death toll keeps rising, along with major rivers. It's going to take months and years for a goodly portion of this state to recover. Please keep those, so badly affected, in your thoughts and prayers.

For storing your firewood get a couple lengths of cattle panels, then make you hoops shed that you can put your firewood in,and then you could put your tarp over the top of that to keep the rain and the snow off your wood and still have easy access.

I'm a 78 year old grandmother and love this program. I introduced it to my children and hopefully they are as devoted to it as I am. It helps me remember to recycle and use everything to it's full potential....waste nothing! Plus, I grew up with the privilege of a rustic family camp in VA. There I'd be a part of team repair work and remember the satisfaction of completing a task and admiring accomplishments! Thank you very much Shawn and I hope this lasts for a long time coming! And thank you for thinking of us here in NC during the storm......

Thank you Shawn for that million dollar sound - as the bread knife cut through the crust of the freshly baked bread. Things do not go right 100% of the time, it is how you react, devise and overcome, that is the true measure of success. Your humble kitchen is far better than 75% of the world's kitchens, and better than 80% in our local village home kitchens. That looks good! And yes, a true Canadian will barbecue even in the freezing winter. I remember growing up in Toronto seeing my older cousins do that all the time, with plenty of flowing Canadian beer.😊 I will always cherish those memories. I live in Italy now, which is also a beautiful country, but I will always love my birth country! Thank you for the videos, they inspired me to seriously consider taking some time off to visit the Canadian outback next spring. Cheers

Bread and pizzas look amazing...I can almost smell it. Thanks for the kind words for the states. I don't live near Virginia but it doesn't surprise me if people are unprepared. Most folk think all food comes from the grocery store. I am restocking my canning jars with dried beans and such.....just because its a good idea. See ya next week up at the Cabin. I really love and appreciate these types of videos! I know that when i work on a project I always have a vision of how I will use my ideals at the end. I think you do a fantastic job at giving us both ends of your visions. So many of my meals, home, and camp projects come straight from your channel. I really hope we get to see you do some small game hunting/ eating, maybe canning some venison or salting meats. I think you have the platform to bring so many people back to their roots. Keep on recording. Your a great mentor along with many other things.

That bread looks so good Shawn! Another amazing video. I cannot wait for the next episode. This is, like quite a few have said one of the best channels on KZbin (I think it is the best), and every time I get a notice that a new episode is up, I smile like a loon. Hey Shawn another great video I'm gaining pounds just watching it lol! Hope you don't mind if I leave some tips here about your sour dough, I'm a keen bread maker and here in Ireland soda bread is traditional, 1. Make deeper cuts into your loaves this allows the heat to travel through the incisions and cook the thicker parts thoroughly (also my nanna said it sworn away the devil and protected us all. Also the deep incisions allow you to break loaf easily into four parts to share and cut. 2. Use a slightly damp cloth (tea towel) over your freshly baked bread this makes a mean crust ! And will be ready to slice properly within minutes 😊 hope this tips help you and your family with your winter baking ,try them Anyways and see how you get on 😊

I love the self reliance, off grid living and videos. No electricity, no propane gas and no tv. So I found the iPhone timing the bake amusing! Don’t take that wrong, just made me chuckle.

Shawn, your video's always make me feel hungry! I only made my first Sour dough bread a year ago and have kept my starter going for regular tasty goodness. Think I need to make a loaf this weekend :) Love your work, thank you for your inspiration..

Hi Shawn! Great looking loaves! I also use that combo cooker for my sourdough, but if you turn it over, put your dough in the shallow half, you can drop it in more gently and lose less Co2. You also have better access when slashing. My best to you and your wife, and thank you for this video!

Another enjoyable episode in the life of. A small trick you might want to consider when cutting these loaves is to make the first cut exactly down the middle, you then slice from alternate sides and then put the remainder back together, effectively sealing and keeping it fresh.

Your wife deserves the credit as well. I wish my ex was half involved and skilled as your wife. Just watching this video is making me hungry. And little Cali is just sitting out in the back waiting for a little piece for her. You're really lucky man kudos to you guys. That's thumbs up across the board.😊 you just made my monday. Also if you need a hand to try to finish up some stuff b4 the snow comes. I'd love to give you a hand. Moose season is right around the corner and I won't be too far from your area. I love the outdoor oven, side note I purchased one of the Tilly hats that you reviewed awhile ago and I love it. I bought it for when I hiked the entire Colorado trail (491 miles) and it was one of my favorites pieces of gear.

Great vid Shawn, I love it at the cabin! I'm sure you realize that some of us live vicariously through your vids, might sound a little lame but such is life lol . Yes, I did enjoy this video. My grandmother cooked on a wood stove and also had an outhouse. Cold backsides in the winters. I can still remember running down the path to the four hole privy as a child and freezing the bum. In the warm weather days you alway checked for snakes and big spiders down the stinky hole. Nothing worst then emptying the slop pot from under the bed. Yuk... Fond memories on the farm. Also, bringing in the water from the outside pump to be used or everything. I still rather live in those days than this Me, Me, Me world we live in today. Granny fan

Sounds a lot like my days growing up at my Grenadian granny's house in Trinidad, W.I. You had to look out for for those snakes in the outhouse for sure. We also had white colored cockroaches in the hole. Thank God we never saw they anywhere else! Nothing like snuggling on granny's high bed and listening to rain on the galvanized roof. There were several leaks and she had a container for each. Seems like there was a leak that would fill a thimble and up to a bucket. Each made a particular sound as they were filled. What a melody when all put together with the occasional crash of thunder. She used what was called a "coal pot" to cook but now I know it was just a Rocket Stove. And she sure could cook! There were no electricity so we used oil lamps...some very ornate and "flambeaux" which weren't nothing more than a Molotov Cocktail sitting on a table. Every plant, brush or tree was used as food, medicine or shade......Best times of my life was there and always wished for a simplified life when I retired and the Lord gave it to me. Now if only sugar cane and mangoes grew in northern Pennsylvania.

This baking demonstration shows the oven is already functional for 'home' cooking purposes. Well...with the aid of fine cast iron covered Dutch Ovens. Few of us can wait for the bread to cool completely before we cut a slice or two!

When I used to bake sourdough, the first loaf is sacrificial! Fresh butter on a hot slice just can not be waited for! Yes, it let some moisture out, but it did not last long enough for it to 'dry' the loaf. Other loaves were let to cool normally, but that first loaf was pounced upon and devoured with glee!!! Yummmm. Great job, Shawn.
