Using meat from a whitetail deer I harvested with my bow, I make deer meat pie in the primitive earthen oven that I made with clay cob. Meat pie baked with the spices that I used is a traditional Quebec French recipe that dates back hundreds of years and was common in my family as my grandmother (my dad's mother) was French and lived on the the east coast of Canada. It is called "tourtiere" or "tortiere", named after the cooking vessel that it was baked in. Before bed in the log cabin, I open up the book that I learned how to play the banjo from when I was a kid and I start from page one, practicing cords and finger picking to see if I can get back to where I left off 30 years ago. I played banjo and guitar for about 7 years each when I was young. I played the guitar on and off over the years, but I haven't picked up the banjo in far too long to remember much of what I learned.
The recipe for the tourtiere filling is as follows, although I made a lot of changes to suit my taste and availability of ingredients.
2 lbs venison, 1 cup of bread crumbs, 2 mushrooms, 1 onion, 1 bud of garlic, fresh sage, cinnamon, nutmeg, salt, pepper, 3 cloves. Cook the meat thoroughly first and then put it in the pie crust and bake until the crust is golden.

In my years in the Army I went to the field a lot but never ever I pay attention to the silence. Years later and specifically after huracan Maria and your videos I learn to enjoy the sound of silence. Beautiful video. Thank you for sharing.

What you say about the Army and learning life from different views. I became an LPN in the Army directly after High School Graduation as a way to hold on to my Grandfather, who served in WWII as a Medic. (I Lost him when I was 15 y/o, he had a Heart Attack that took his Life, while he was using the restroom.) To never get to say "I Love you and Good Bye" This kind of pain ingraines into your brain! So, my greatest memories of him as a child was him making fires for the "all day family cook outs" and evening fires in his famous indoor stone fireplace. So back to the Army, what a let down when you know there will be NO evening fires in the field and learning what light discipline really means...what a Bummer!!! Like Yeah, "This is not what I had in mind!" Love you Veterans, esp when we go through those moments when No one can understand!

This video, plus all the others makes me long for country life, most of my homes had wood heat, cooking, growing, canning, is so rewarding not to mention healther. My children have memories of the warm fire, the power going out from weather and storms. Cooking on the stove, sledding and snow ball fights. Doing chores, chopping firewood, feeding the animals. Thanks for the reminder of what is important, faith, friends, and fun (and good old hard work make for a good night sleep.

My Canadian neighbor makes one with similar ingredients. However, after grinding the meat through the 3/8" plate, he runs it all through the 1/8" plate with all the vegetables and spices. Almost looks extruded. He only makes it once a year, and always shares a pie with me. It's delicious and I look forward to it every year. Thanks for sharing.

I think what I enjoy most about these videos is how attentive/caring you are for your dog. I do think you play it a little fast and loose sometimes, letting her out alone with all the dangerous wildlife out there. But still, you can tell she's a happy dog and adores you. Keep the vids coming.

I've been watching you since your first video. Your expertise and knowledge and downright stamina are entertaining to watch. I've noticed you're trying to increase the production value of your videos, and i say good for you. but a personal request. don't get TOO commercial or it eats away at what makes your videos good. the simplicity and the satisfaction you must feel accomplishing what you do, a simple homespun quality, would suffer from this as well. You show what one person can accomplish. It's one thing to look at the finished product and have someone say " I built that", but to actually see it done was fun to watch. Plus you also don't bore the viewer with things like sawing a log. You show the beginning and the ending. Bravo. Look forward to many more videos. Enjoy your world. You built it with your bare hands. May you live to be 100. Peace

I too love his videos. He is a work horse that's for sure, but one thing I noticed is he rounds his days off, has an equal balance for everything he enjoys doing. He is one of my idols and just as you stated I hope he never goes commercial too far. I just can't imagine it taking place though, he is just too down to earth.

Shaun, you mentioned Christmas, and at the end of the video had that bit of footage with the sound of the fire in the woodstove. A video idea I had at that moment would be perfect for Christmas: A loop of the woodstove with a fire burning in it, and maybe you playing some Christmas songs in the background on your guitar or banjo. And I saw that meat pie and couldn't help but think it needed some gravy to keep it from being too dry. Guess I'm too used to venison with a low fat content and have had too many potpies that have gravy in them. And scramble in a couple eggs with that pie and you have a perfect breakfast. Here's hoping it's not too bitterly cold a winter for ya this year, and that it doesn't snow too much.

I'm with you on the gravy boat ;) I blame me gran for that ;) and the wood fire for christmas would be nice ... with a nice paired background soundtrack of banjo and guitar ... on occasion through it . as for the winter according to the farmers almanac .. plenty of cold and snow is expected this year

Shawn, those red chairs are going to give you a back problem due to their poor design. My father-in-law was 50 when he built his own cabin with hand tools like yourself. He often talked about Windsor chairs that by design were built in the day for both supportive comfort and time lasting beauty. He read up on their construction and fitted each chair for family members that came to visit. I was amazed when I sat in my chair, it's seat and armrests were molded to my body providing complete back and muscle relaxation. His philosophy of living alone in the woods at his age was to build a step- free habitat to prevent tripping and falling plus staying physically fit with plenty of wood-splitting exercise. He lived this way until his death at 95 years young with no regrets due to his own personal self-reliance.

As a recipe man I enjoyed your meat pie Shawn. You may wish to try some duck or goose fat as an experiment vs. the butter once you get the birds in the larder. Your spices are spot on for something I will try. And yes, I have my grandmothers grinder which I have kept all these years for small amounts of meat. Memories are the best.. Thanks for the post

I first saw that movie years ago of course when it first came out. I'm still disturbed by it and never want to watch it again inspite of and because of how well it was done.

I was wondering when we'd hear the banjo. I had a little 5 string with an expert, 40 years ago. Now I am in an aged peoples' ukulele group, playing banjolele, and my old frailing ability kicked right in, Pete Seeger style. Love the cabin, the dog, the lifestyle. Greetings from the Australian bush.

I liked the Deer Meat Pie part of the video. I like the mix of building and cooking that you often have, and I am always ready to hear your insights/reflections about life as well. Thanks again for great videos! My sister watches them as a way to unwind and to enjoy peace and quiet.

Keep playing! I always wished I learned to play an instrument. Both of my sons play multiple instruments. As adults I continue to encourage them to keep playing. Music was the first form of social communication (I mean after screaming and banging rocks and sticks) it was the first form of universal entertainment for anyone, 6 to 60, male, female, blind, crippled or crazy. It's as valuable a skill as swinging an axe or using a saw. It also rounds out the entire experience of living off the grid in comfort. Another great video. I always look forward to my feed for a new one. Neil

When I hear wall street money types ask about how I plan to retire, I show them you're cabin and camp. Who says I need a four bedroom house in the suburbs. Screw that. A cabin, a truck and my dog. Kids can come visit whenever, retirement is MY time.

Oh my Goodness. That meat pie had to be yummy deeelicious. All them spices you put in it it had to smell awesome while it was cooking up in the skillet. Thank you for the video.

A few christmas ago, i was sick of cooking turkey so i decided to make Tourtiere instead. Being we dont normally have beef in our freezer i made it with, deer, elk and pork. It was so good, the pork just added a little more moisture to the game and made it so good. Thanks for your awesome videos and cooking ideas.

When I was little as a family we watched a TV show called *Hee Haw.* Made down in Nashville somewhere. So I grew up with Old Country Western music w/steel guitar mandolin dulcimer fiddle with pickers like Flatt & Scruggs Buck Owens Patsy Cline Johnny Cash. In 1962 I discovered Rock n Roll but I still Love country including banjo fiddle & such like..
