As a baker, are you baking with a stand Mixer or hand mixer? In this video I put the stand mixer v the hand mixer to test so I can bring you some surprising results about the use of these two common equipments in baking.
A stand mixer stands as a powerhouse behind most baking businesses but as a beginner should you start with a hand-mixer before upgrading or a stand mixer should be a must for you? This simple hand mixer v stand mixer baking test yielded some surprising results that I'm excited to show,hopefully in the end you will be encouraged to keep to the simple equipment you may have.

Recipe used in this video
175G Stork Margarine
215G Caster Sugar
140G Broken Eggs
55Mls Milk
230G Self raising Flour
Pinch of salt
2 teaspoons pure vanilla extract

METHOD FOR THIS TEST
**Combine, sugar Margarine and vanilla and cream for 2 1/2 minutes
**Add in eggs and beat for another 1 minute
**Then add milk and flour by alternating each ingredient finishing with flour.
**Mix by hand to avoid over beating then transfer to baking tin wrapped in baking strip.
Bake in preheated over at 180°C for 55 mins to an 1 hour 10 mins.
A convection oven was used for this bake.

ADJUSTMENTS FOR BETTER RESULTS BASED ON TEST.
** Beat sugar and Margarine for only 1 minute 30 secs.
** add in eggs and mix for 30 secs and slow mixer down.
** Due to the small quantity of the bake, eggs can be mixed by hand after beating with a fork before adding to Margarine mixture
** fold in flour and milk slowly and if hand mixer has to be used,keep it slow for 3secs.
** Bake in 6 inch tin to allow spread and expansion for even bake.
** Oven can be turned to a 185-190°C to accommodate the use of baking strips.
** if using DIY baking strips double the liners in the foil to make it efficient.

NOTES
TUNNELING:
**From the word "tunnel" is when a tunnel is formed through the cakes due to air bubbles trapped in the middle pushing through the crumb. The air bubbles may be due to over beating and over mixing the butter.
**There are several reasons for tunneling but the main reason is what is identified above and in this experiment.

Thank you for this video I needed help because I pinky have a hand mixer at the moment …. Went looking for one in Dec and everyone is sold out of stand mixer so good to see I can use my hand mixer

Your Kenwood stand mixer is beautiful, especially the glass bowl. In the US the KitchenAid mixers are the most popular, but their quality has declined in recent years. Your mixer looks as if it will be dependable and a joy to use for years to come.

Hi Jeanette, thank you!! I hadn't seen this comment earlier, apologies!! Yes I have had the kenwood for nearly 7 years now and it's been a saviour.. The original bowl was plastic but I got the glass as replacement when filming and it's dependable..I've heard about the Kitchen aids but I'm a Kenwood loyalist truely 🤦🏽‍♀️.. cant a kenwood be purchased in the US?

There is a guy on tictok and KZbin called Mr. mixer. He does KitchenAid repair tutorials and you can also send your KitchenAid to him. He has even remanufafured the spring on the Beater Shaft that KitchenAid took away. I've never usedva Kenwood so I can't really judge it. But I can't help but notice the lack of vertical handle on the bowl. I'm aware Kenwood has a model that more closely resembles a KitchenAid and has a vertical Handle. Even when KitchenAid bowls don't have a handle at all the base is still small enough for me to grip in my hand while poring batter.

I always wondered the difference as I've never had a hand mixer. I was lucky enough that my mom bought me a stand mixer when I got married and left home.

Thanks Amy, like you I didn't know either and just wanted to have a tangible fact based answer,so glad I did with some surprises too... I genuinely thought there could be differences but clearly not that much... You were lucky your mum got you a mixer from the start, bless her! I had a handmixer but not for long . I picked my kenwood km330 up when I got some vouchers from my then new electricity provider when I switched from another provider needless to say,after a year I went back to my old provider but the mixer was worth it from the vouchers n on a discount too..#Happy baker

The equipment may depend on how much time I have and the amount of batter I must mix. Or did you already mention those issues? Also, both seem to require the bowl to be scraped as batter splashes onto the sides of any mixing bowl.❓ Can you compare these products while mixing cake icing /frosting. Thank you for this infomation.

It's a tie to be fair but this video was made at the start of my channel when I was still lacking in skill, perhaps if I was to make this video again I will communicate this better .. Perhaps the cheapest may be about $20 if you check on Amazon, a good one may be between $ 20 -40 or it's equivalence in £. I'm in the UK so the Amazon basics brand is about £20 and a Russel Hobbs 6 speed one is about £15 . Depends on location too.Where are you?

@@Gladyscakekitchen The hand mixer definitely comes in handy for me when I’m only doing simple/small tasks. The stand mixer on the other for me is the best especially for cheesecakes because working with cream cheese is a sticky mess and the stand mixer makes the job of cheesecake almost a lot quicker. Plus I love making meringues in my stand mixer.

I love a cheesecake but its the one thing I'm not so confident on making, I use a stand mixer for my larger bakes as it can take more but I love it for my Swiss and french meringue butter creams.. I couldn't imagine doing any meringues with a hand mixer, it will be such a tedious undertaking lol

@@Gladyscakekitchen Ikr? Especially when you have to add sugar, how are going to keep the bowl in one place while holding the hand mixer? With the stand mixer, my hands are free, all I have to do is gradually add in the sugar and let the stand mixer do all the whipping job!

@@CShannon1991 ... Exactly! I love the convenience and efficiency of the stand mixer, I have 4 of them and I'm not an industrial quantity baker.. I have the collection of 4 more for content creation and home baking but for the video above, I wanted to encourage beginners on the use of a hand mixer especially if that's all is available.. I use my hand mixer for content too which showcases its usefulness #win! Do you sell your cheesecakes?

Hi Miss B, thank you for the comment.. I realise this video should have been communicated better however, it was made a year ago when learning youtube and communicating through videos was at it's formative stages, if I were to redo this video again, the results would have been different. in essence, there isn't a clear cut difference in using a stand mixer or a hand mixer when it comes to a good bake. The handmixer is limiting for larger quantities but doesn't affect the quality of a bake, my intention was to encourage the use of simple tools such as the handmixer by comparing it to it's immediate counterpart - a stand mixer.. I see rhe intention may have been lost here though, I'll perhaps consider a retake of this video in future, hopefully that would helpful. Thanks so much for your feedback, much appreciated x
