Growing up in the Texas panhandle that shot of the storm starting at 8:00 reminded me of the storms we see on the great plains (without the water but "sea of grass" lol). Okay my friend. I love watching because I am a real fish head just like you. Other than that I'm a French chef. Just wanted to share a couple things with you. Fish is ready to turn over as soon as it has a little white ring around the perimeter of it. Same for chicken. If you want perfect fish look for the White Ring flip it cook it for almost the same amount of time on the other side. You're over cooking your fish and it could be even better than what you're doing. Also it doesn't make any sense to put a whole stick of butter on a flat top if you're just going to rake it all off. You should just get the stick and move it around on the flat top and then pick it up that way you don't waste the whole stick. Season the fish on both sides with salt and pepper and or whatever it is you use to season it with before it goes in the egg wash and the panko. Makes it taste a lot better. Whenever you're going to use panko, put a little squirt of oil or butter whatever you're using on the side you're getting ready to flip it on to. You hardly use any butter whatsoever so the second side doesn't get any. The knife you use to clean your fish desperately needs sharpening. I can see it when you use it. You can tell when you try to fillet the skin off and it catches and takes off chunks of Flesh. Sharpen that baby razor Sharp. Appreciate the good attitude that you have and wish that I lived in an area like that so I could do the same. I'm in Martinsville Virginia. Keep up the good work.

Hey bro in New Zealand we have kingfish to 120lb. Big brother of amberjack. We use 80lb braid with 130 lb trace. No swivel a pr knot tied with a bobbin. But enough trace, maybe 8' so that when we cast our finger is on the trace not the braid. Saves your finger. The reels we use are penn slammers, daiwa saltigas, and of course Stella's. If you watch the lateral line on you tube you will see. Episode 36 is amazing

AJ’s will kick your rear! Tighten your drag all the way down and don’t use anything less than 100 # leader. I use 200# leader and it seems to work. Oh yeah, and don’t point the rod tip down. Malpractice really. If you're going to hunt an animal and take its life, you need to take that seriously and minimize the harm to the extent possible. Great video I'm glad you went after those amberjacks that was some good action, just to remind myself I prefer to fry my fish whole skin and all unless we are dealing with some pretty rough skin but definitively all you caught except the trigger I just give the fish 2 or 3 slices so that it cooks threw. The trigger I cut around it as if to fillet it then I grab an end of the skin with a plier usually by the tail and pull the skin off then fry it whole or Maybe cut the head off. Anyway it was a good video fun to watch Cheers

Man if you are on the great lakes and see clouds like that - you best be off that lake like now or your gonna get pounded. Losing fish sometimes means the fish hooks need sharpened, not being critical but an old fisherman I used to fish with saw me losing fish and asked me if I sharpen my hooks - guess what _ I now sharpen my hooks! I remember a fishing trip where we caught 6 amberjacks, they fight really hard like you say. The only reason that we can got them was for the equipment: Shimano Tyrnos reels, 80lb braid with 100lb fluorocarbon leader. Less than that is very difficult!
