Made the bagels and came out fantastic. Mine came out to be a mini size. Instead of 6 can I divide into 3 and would that change the boil and bake time?

Sure you can :). I wouldn't change the boiling time, just the baking time (+ about 5 minutes).

I follow keto diet but I have no issues with gluten. Can vital wheat gluten be substituted for the psyllium, and if so what ration?

Hmm mine don’t look nearly as good. They turned out greyish, maybe because I turned them in the water? Are they only supposed to be with the bottom side in the water? And what is the boiling water doing anyways? Why don’t we just bake them directly? Curious :)

Ah, I followed one comment, adding Natron bicarbonate in the water. Maybe that’s what made it more gray :(

Boiling them in water will make them a slightly different consistency. (It doesn't matter if you turn them in the water.) However, you can skip this step if you prefer and just bake them.🙂

I was thinking about that, and I'm gonna try putting icing tips or corks or something in the holes to keep them open while they bake.

Don't worry, it is enough to make a larger hole in the middle of the dough (about 1.5-2 inches). 😊

Everything was going great until the boiling water. Thankfully, I only had 2 bagels in the water when within seconds, they disintegrated. The rest went right into the oven and cooked for 28 minutes. They are cooling now but look fine. We will see.
