You can also do this with a barbacoa style approach. Fill your roasting pan with veggies, guajillo and chipotle peppers, then add beef broth once you get a nice bark. I've done it a bunch of times and I highly recommend trying it out with chuck roast, short ribs, oxtails, beef cheeks or anything beefy, really.

One of my favorite sandwiches! I like to throw a green chile pepper in the pan as well. It’s excellent mixed in with the pulled beef.

Could you please expand a bit on your process and what chili pepper you use? I'm a huge pepper fan! Not everybody I cook for can handle the pepper heat I like, but, they suffer thru, painfully sometimes, but, happily! I will cook this on my offset stick burner with oak, I don't have any hickory right now. What is your favorite rub seasoning and process/timing, I'm guessing it's overnight. I've never done anything in a semi-submerged ajue the way Malcom is doing this.

Recently got the killer hogs AP, hot sauce, and a collection of stickers.. all amazing. This man has helped change my view of BBQ and created some of my best smokes based off his guides. Malcom is a smoke 💨 master no matter the grill! The AP seasoning on veggies.. unbelievably delicious! Fry’s… you make it. AP is accurate.. all purpose baby!

Oh my freakin gosh!!!!! This will be a two parter. We followed the recipe to the letter and so far it is going exactly as posted! For the time being (while I wait for the covered portion to finish) your spicy slaw is without a doubt is the BEST we have ever had! I made mine from total scratch using the following; 1/2 head of white cabbage, 1/4 head red cabbage (both thin sliced and cut into 1/4 to 1/2 inch length pieces) and 1/2 of a large carrot small shred. With this quantity we doubled the mayo/pickling mixture recipe (kept same mix of jalapeno/onion ). Without question, our all time favorite slaw of all time!!! Cannot wait for the meat to finish!

Made it yesterday w/a 4.5lbs chuck roast (choice grade). Mine was thicker than Malcolm's & next time I'm going to try & get a cut closer to the thickness of his & a prime grade chuck roast if at all possible. The cole slaw recipe was awesome & a perfect compliment to the pulled beef, a must! Note: We didn't add in the 2nd jalapeno as we didn't want that much jalapeno flavor / heat & it was still rock star good.

I just bought a Traeger portable pellet smoker, like the one in the background on your video. I wonder how it would do with the recipe? I have a bag of hickory pellets and a chuck roast. It is time to experiment with the new toy!

Can’t really go wrong with a pellet smoker. I have a pitboss and generally 225-250 f until tender it’s kinda impossible to screw up. You can even put it up to 300 like he said but 250 is like a safety net I guess

I always look forward to Malcolm’s videos. I actually went to his physical store and was so disappointed when the guy behind the counter said “he just left, but will be back in about an hour”. If you ever want to go to a store that literally has everything you could possibly need for cooking outside, stop in Hernando, Mississippi and go to How to BBQ Right store. The guy behind the counter said “Malcolm is here most all the time and loves visiting with customers and fans”. It’s a great store.
