A couple of months ago I visited a local asian market to search for the dark and light variety of soy sauces; however, there were no labels in English distinguishing the different types, so thanks for this video!! Also, I suggest to your English-only speaking viewers to take a screen shot with their phone camera of those products they wish to purchase so as to better help them find the product in their local Asian market.

hi, i like your video! But I think in the paste part, the Chinese bean paste may not belong to paste. Here is my idea, both Korean bean paste and Japanese miso can make soup, but in china we never use that red bean paste in any kind of soup. It is made of broad bean instead of soy bean. Although it is indeed one kind of bean paste, it always used in stir fry. And in US u can also find Chinese soy bean paste, it is yellow-a little bit brown I think. Still, not for soup. If u interest, in China we always use pixian broad bean paste for real Sichuan food (like mapo tofu), u can find it in Amazon. Pixian is not a brand it is a small town's name, that place make best red broad bean paste in Sichuan. In northeast china we make the same soy bean paste but not as sweet as Korean soybean paste, a little more salty.

I use Sambal primarily to spice my foods. It's a thick sauce with a great salty, vinegary taste. I especially like to use it to add to my noodle bowls (after cooking) or on the side with fried or white rice. Enjoy!

I have quite a few of these already in my pantry now that online shopping becomes easier but was looking to expand my recipes.. . especially since my son basically only eats noodles or rice. Even today we had a seafood stirfry over some really nice noodles I picked up in town because I liked the look and color 三鹿牌 San Lu ? Knowing good brands for noodles. ALso how to make Kimchee. I love fermented/pickled foods a lot. Have some Cerviche fermenting at this moment

Just additional information. Sweet rice is also called glutinous rice. It's the most sticky of all the rice. It's used in savoury dishes or dessert dishes especially in thai cooking like the mango with sticky rice.

glad that you talk about Oyster Sauce. Just a small dab can liven up a dish with umami, I often use it for stir fried vegetables or boiled vegetables. A lot of the sauces you talked about is quite common in my household

Very useful video. Happily, living on the west coast of Canada, there are a large number of Asian grocery stores within walking distance of my house. Still, it takes a while to get and learn to use these many flavouring agents. I did not know there are so many variation on the theme of soy sauce. So many things to try. I am a retired cook, teaching my self new things, in my antiquity. I love food and cooking for people. This exploration of Asian cuisine is great fun and gives me new things wow friends with. CI decided to learn one country at a time, in the beginning, so I am currently focusing on Chinese. I have had very little experience with Korean food. So far I have not enjoyed it as there is a commonly used ingredient that I find slightly offensive. I don't know what it is but have tasted it in every Korean dish I have tried. I think of it as "that Korean taste". However, it may be just my bad luck that all of the very few Korean things I have tried, had that spice or flavouring agent. Even the kimchee from Korea had that flavour. Later, I will try some of your recipes from Korea and perhaps discover what that odd flavour actually is or discover that it is not as common as I think. You have a good communication style.

I just want to know. Where did you get that huge jar of gochujang and how can I get it in America? I want a jar that size. No smaller.

Feeling so proud of myself as I have almost everything in your pantry, if not the one you are using, I have something similar to yours. But actually nothing can really substitutes the other in Asian cuisine since their functions and flavor are really different. Lao Gan Man chili oil is a MUST in every pantry of Chinese from China Mainland I would say. Really appreciate your pursuit of perfection in cooking which can be reflected in this video.

She was. She was in a food game show where she won and got a restaurant. She left the restaurant, but not sure why. She burned that bridge. They will never want her back. Unfortunately she may have gained a bad reputation as an non-dependable ungrateful person. It is too bad that she was unhappy, but if she knew that path was not for her she could have not done it so someone else could have that spot. I don't know the whole story and I wish her well. After all, I do understand wanting to live life in her own terms.

I'm surprised how many of these I had considering I've only been trying to cook Asian foods at home for the last couple of years, and only very occasionally, I'm not very good. There are still many I need to try and I'm so glad you gave a soy sauce explanation. It's always overwhelming when I get to that isle at the Asian market, I've been just using the kikomins lol.

Great video! As other essentials I might add black bean sauce, dried tiny shrimp, fermented vegetables (in that squat brown ceramic jar), nori, dried coconut flakes to add to jasmine rice while cooking, coconut oil and yuzu soy sauce perhaps. I have a crazy pantry full of everything too.

I have a huge Asian supermarket, Uwajimaya, near me (it's as big as a Walmart!) and I'm always so overwhelmed when I go, end up just usually getting Udon noodles and freezer takoyaki 😅 Now I have a shopping list! Love this!

My family is organic food fans. I really recommend organic meat and vegetables. Usually we can find important asian cooking sauce in the organic shop. Sometimes you can have more choices of organic cooking sauce in asian shops!

I finally have most of those Asian ingredients, am only missing the rice wine and the miso paste. I don't care too much for the miso paste. And now that you've mentioned that the rice wine takes away the raw flavor of meats and poultry, I will definitely make an effort to find it and use it for my Asian dishes. I started building my Asian pantry 2 years ago but the markets near me (Providence is closer than Boston) don't always have the brands I want. Thanks for the Amazon links. I need a better dark soy, have Tahini rather than sesame paste; I want mushroom soy and have no black vinegar or Sichuan peppercorns but otherwise I think my collection is pretty respectable!

dry sherry wine works well as a substitute for rice wine, it tastes a little different, but does the same thing in most cases (like removing gameness) some people prefer it even tho it does take away form the authenticity. Edit: If you do want to cook asian food and live in a country that has easy access to rice wine you should get that, however not every place has the same availability of products like USA.

Great video! Very helpful. I am building my Asian cooking ingredients. I have a question about sesame oil. Is it true this has to be refridgerated? It does not say on the bottle. However, another chef I watch on youtube says it needs to be.

Jaznellow certain oils tend to go rancid quite quickly same with some nuts and seeds so it's usually recommended to keep them refrigerated to avoid them spoiling

After opening sesame oil definitely should be refrigerated. Refrigeration protect this type of oil to become rancid.

Do you mind also uploading a video of different types of salts and sweeteners (syrup, sugars, etc)? I don't know which ones to use sometimes. Sometimes it's hard to figure out the salty seasoning ratio depending on type of soy sauce or sauce. :)

You saved me some effort in finding a tour guide to my local Asian markets :-) Some of us Eurotrash (with affection) enjoy exploring and shopping in the markets but have a difficult time looking at a wall of soy sauce then to to turn around and find another wall of soy sauce from a different country (some of us are pretty good at identifying the language even though we can't read it.) Love your videos - you have such a good spirit and passion for the food and it shows. Much success!
