Janet I’m so glad u are making recipes with coconut flour. I’m older and I was using almond flour and my arthritis got so bad, and after much research I found out almond flour is inflammatory to me. 12-8-2023 are used only the coconut flour, I substituted a half a cup of coconut sugar and a squirt of date syrup for my sweetener. Eight minutes in the oven and they were perfect. I had to add about 2 tablespoons more coconut flour to the recipe. Thank you so much Janet ! I will try the ones with the almond flour and coconut flour next. PS… I pressed a walnut in the top of each one of mine.

Love these! they are a perfect recipe to have on deck - while they are so good just as is- sometimes i want a more simple dessert - these are perfect!! Peanut butter would not work very well in this recipe because it would effect the liquid to dry ingredient ratio and that is very important when using coconut flour. I do have some keto peanut butter cookie recipes that you can check out. Using oil instead of butter should work just fine. The best oil as a butter substitute is coconut oil however any neutral flavored oil should work. Olive oil is not a good choice because it does not have a neutral flavor and you will be able to taste the oil.

Please stop using cups to measure flour, use grams instead. This what professional bakers do because it gives consistency, measuring cups are too imprecise and when switching to a kitchen scale with metric units your precision will increase tenfold at least. When you have a scale you don't have to measure liquids either (since 100g water/milk = 100ml) so you will save a lot of time and dishes using a scale.

Not so much with coconut flour. Coconut flour is already thick and absorbent so if you firm the dough in the refrigerator the dough may dry out too much

That's a little tricky. Coconut flour is VERY absorbent and eggs are about the only component that can handle the texture of coconut flour. The eggs also create texture and bind the ingredients together. However since this recipe only contains 2 eggs you might be able to get away with using flax eggs. To make a flax egg place 1 TBS of ground flax seeds in 2 1/2 TBS of water. Stir it slightly and allow it to sit for about 5 minutes. It will get thick and be a texture that is similar to an egg yolk. This is equivalent to 1 egg. This recipe calls for 2 eggs so you will have to double this. If you do this you may want to add 1/2 tsp more of baking powder and about 1 TBS of apple cider vinegar to make the dough not so heavy. I can't promise that you will get the same results but it's worth a try. Hope this helps. :)

Yes you can use regular brown sugar and you can adjust the sugar to your taste. However be careful not to reduce the sugar too much the dough will begin to lack bulk and you will end up with a mess

Sift the xanthan gum in with the dry ingredients and stir the water in after all the ingredients are mixed together

In this recipe you can leave the baking powder out. The texture may be slightly less puffy but since this is gluten free it shouldn't effect it too much.

Can I use peanut butter instead of regular butter, if so should I use the same amount?

You may be able to substitute peanut butter. My concerns would be the effect it would have on sweetness, salt and texture. The fat from the butter really helps tp keep these cookies moist.

Don’t know what I did wrong… dont know how to cook, so it’s harder for me… they came out too greasy and soft although I added the extra 1/4 cup of coconut flour… they taste good… any advice for me? (I think the flour iz too “thin”, so maybe for next time I should add more coconut flour and less butter???)

My first question would be did you allow the dough to sit for the full 15 minutes. The other issue may be the texture of coconut flour can vary from brand to brand so it's always good to test the dough before baking. If you're not sure about the texture bake 1 cookie and see how it turns out

@@JanetsDeliciousLowCarbKitchen the dough seemed ok: it wasn’t hard enough So I added 1/4 cup and waited… and it seemed ok… but after baking and waiting, cookies were just greasy and soft…I’ll keep trying. They’re SOO GOOD even though they turned out like that… so trying will be something I NEED!!!

I have tons of coconut flour as during the lockdown, when here in Italy people could go out only with a good reason like buying food, I would go to the store buying a package of coconut flour 😁 Anyway, I have a question: I can't find monkfruit... I looked for it even on Amazon but... Nothing. I use erithritol but I don't like it because, when cooked, the flavor is bitter and disgusting.... Any suggestion? Thanks

The two sweeteners I use are the Lakanto monkfruit sweetener and the Besti monkfruit/allulose blend. I do have links in the description to where you can buy them. I believe in Italy you can buy the monkfruit sweetener at ubuy,co,it. I'm not sure if the monkfruit/allulose blend is available in Italy

@@robyroby1902 I don't use erythritol by itself because it does have an after taste I use the Lakanto monkfruit erythritol blend and it has a very nice smooth flavor

You can use a small amount of stevia, I used two tablespoons of stevia in the mix, and it turned out perfect!

Definitely I have issues with my shoulders so I almost always use a Kitchen Aide but this can easily be done with a hand mixer or wooden spoon :)

Yes they are supposed to be a little soft but not soggy. When they first come out they will be very soft but they should be firm after cooling on the pan

@@JanetsDeliciousLowCarbKitchen i see , kinda disappointed that the texture arent hard enough so the crunchiness is missing. I tried baking some very thinly spread with the leftover dough but still the same result.

Yes I have baked with gluten many times and it is great for keeping baked goods together. Unfortunately a lot of people who are subscribed to my channel are gluten intolerant so I stay away from gluten on the channel

Yes a half cup of sweetener would work just fine. This recipe is very adaptable you can adjust the sweetness according to your taste without having to adjust anything else

I would cook them a few minutes longer and if that doesn't work use less liquid the next time you make them. Coconut flour is really tricky when it comes to liquid. If your coconut flour is very fine it will require less liquid if it is more dense it will require more liquid.

Most recipes only contain 1-3 teaspoons of baking powder. One teaspoon of baking powder contains about 1.3 grams of net carbs and it is spread throughout the recipe so it is not enough to effect a keto diet.

I wouldn't advise using honey. Coconut flour is very sensitive to the amount of liquid that is used. I like to use granulated monkfruit sweetener. If you choose to use honey you would need to cut down on the liquid a little

Coconut Flour cannot be substituted for any other flour it is very absorbent and requires a lot more liquid and binders than other flour

@@AJ-ku9jz yes you can do that. If you choose to add the gluten flour I would suggest using the coconut almond flour version and substitute the almond flour with gluten flour.

If you'd like to make the cookies sweeter then you can add a little bit of liquid sweetener but you can not use liquid sweetener to replace granulated sweetener because your batter will lack the bulk it needs to cook properly.
