This Vanilla Bavarian Cream - called Crème Bavaroise in French - is a super light and flavourful cream filling or dessert. It is made from combining a Pouring Custard (Crème Anglaise), Gelatine and Whipped Cream.

Ingredients:
240 ml Full Cream / Whole Milk
1 Vanilla Bean - or 1 1/2 teaspoon of Vanilla Paste
4 Egg Yolks, at room temperature (about 75gr)
50 gr Caster Sugar
6 gr (1 1/2 teaspoon) Gelatine Powder - plus 1 tablespoon cold water
240 ml Heavy / Thickened Cream - min. 30% fat

This is not bavaroise. This is diplomat cream.

Diplomat is made with a pastry cream base - bavaroise is made with a creme anglaise base. The difference is the addition of a starch to thicken the cream. This is bavaroise.

I can't stand gelatine, it can ruin the flavour of things in my opinion, probably better of using some xantham gum or even better potato starch which works better than corn starch if you require for the clarity of a sauce to stay perfect.

Ha! I try to use g grass fed gelatin wherever I can find a use for it. Panacotta and Jell-O shots are what I do most. I tried this recipe, but it was too sweet!
