Great tip on the well in the jalapeño. I’ve been making poppers for years, and ate them nightly for at least one year straight. That’s a great tip to hold the cream cheese!

Reminds me of the time I had just got my own place for the first time. Had lived there less than a week, great mood wrapped some chicken in bacon strips and threw them in the oven and went to smoke on the balcony while it cooked up. Locked myself out. Had to call fire dept and everything because I was locked out without a way inside. They eventually got in and saved my building from burning down, the chicken wound up overcooked and dry, but STILL delicious. Hard to mess this up!

Theres an older video on youtube titled atomic elephant turds i believe. Thats where i first saw this recipe and ive been doing it for years now. For me though, its jalapeño, cream cheese, i lay a fat bead of Sriracha down on the cream cheese, then bbq rub, then wrap in a chicken thigh, then wrap with bacon. Grill til done. Then a thin layer of bbq sauce on them then they go under the broiler until the bbq sauce is bubbley and starting to char a little. I call them elephant bombs.

The chicken looks a lil dry. As to be expected. I learned to brine them in pickle juice. Sounds crazy but it works very well.
