Angelica, I purchased your cookbook for my grandmother and she absolutely loved it. She was always on the search for a simple Mexican cookbook. She would always tell myself and other family members about the delicious meals she made from your book. Sadly, she passed away a little over a month ago and your cookbook is now in my home. There is not a drop of Hispanic blood in my body but this food speaks to my SOUL. LOL I have been watching your videos and making your recipes for years and they are always so, so good. I grew up on beans and fresh veggies from the garden so recipes like these remind me so much of home. Even though the recipes are different there's something so comforting about food like this that's simple and tasty.

This reminds of when I was first starting out on my own. I would always have a big pot of pinto beans on hand, and every morning I'd make a dozen flour tortillas. Breakfast, lunch and dinner.

I really need to thank you. Many of your recipes have found a way into my own recipe box. They're simple, inexpensive and tasty. If I had to budget and cut back on expensive cuts of meat; this is what I would be eating. Throw in some potatoes, corned beef or chorizo and I’m happy either way. I grew up eating like this too. My mom or grandma’s always had fresh beans and tortillas in their kitchen.

So glad your family got the help y’all needed. Brings back memories when my single mom and me got some government help ( a cheap loan) for my college. We were below some kind of poverty line and I qualified for a low interest student loan. I paid it back after I graduated. My degree was useful so for me college was a good thing. Not so sure these days that it’s worth it unless it’s a fancy degree.

Just seeing here that tortillas can be dipped in a bean puree’ amazed me. So, I made the En Frioladas today. I used a can of chili beans which had all the pepper flavor you added to yours. And I topped with salsas verde and crema. What a great easy skillet meal. Thank you! Your simple recipes are changing my food life!

Neither my husband nor I are Hisanic, but refried beans and cheese with tortillas is one of our favorite quick meals. I keep our pantry and fridge well stocked with plain canned pintos, and canned charro beans, flour and corn tortillas, colby jack cheese. Now I just need to make the salsa. I have made a "quick version". I puree a can of Ro-Tel with some chopped onion that I steam in the microwave. I call it my "Tex-Mex Tomato Sauce",

Even more budget friendly, when you're down to only the bean liquid of a pot of beans, just heat the liquid to thicken for enfrijoladas. Baking powder isn't necessary for tortillas since they are a flat bread. I never use it. Yes, to homemade beans and tortillas to help that budget. Never throw out perfectly good food. Think of what you can use with those bits of leftovers.

Ugh, that jar of chopped chipotles is hard to find at my HEB ever since the pandemic hit. They have it every once in a while, I always grab a bunch. I don't like stuff in cans if I can get it in glass.
