servings = 3 or 4 I tried this recipe using plain brown sugar and just tapioca starch (without potato starch ) - it wasn't quite chewy .I guess when i thought i kneaded enough i was wrong.Despite the texture , it tasted good.Thank you for teaching us this recipe :)

I made boba again with potato starch as well as tapiaco starch ,paying more attention to your instructions.Result = slightly burnt brown sugar ( my bad ) but the boba is so satisfyingly chewy .Thank you for the response.

Please note that you will need to make sure that the hot water needs to cook the starch, you can add the first addition of starch into the pot directly. Otherwise there is a chance you might make „ublic“ and not dough & you will not be able to form the balls. (Happened to us the first try;)

I have to know what kind of matcha you use! It is so pigmented!! The only ones I've seen in the US are a much paler, pastel green.

The matcha that is of higher quality (cerimonial grade) ist the most vibrant in color, but also very expensive - you can maybe go for one grade or so below if you would like to save some money. I would also recommend that you don’t use the one intended for cooking,it often tastes like hay and has a very unpleasant color. Unfortunately the one I mainly use is a blend a Japanese tea house in Vienna imports themselves, so this one is probably not available in the US. But maybe check online if you find something suitable for you. Also if you store your matcha air tight & in a container which doesn’t allow light inside in the fridge you insure that your matcha keeps the best quality for a long time. Can I replace the potatostarch with the cornstarch and the cassava starch with the tapioca starch?
I appreciate your clear instructions . This is the best video i could find ! My boba is chewy and delicious if i ignore the slight taste of burnt sugar (definitely need more practice).
