I looked through all the comments - sorry I missed your question. Carved vegetable you can carve 3 - 4 days in advance. Carved fruit - you can carve the day before the party. Note: carved vegetable - after you soak in cold tap water (Not iced water) for 5 - 20 minutes - take them out from the water - store in airtight plastic container in the fridge. If they look dry - dip / soak in cold tap water for 2-3 minutes or spay with cold water. All the best :)

Dear Lady. Thank you so much for the wonderful lessons. I am a beginner and am having difficulty cutting down the sides into eight pieces. Sometimes it is too far and the petals almost fall off. Other times, they are not cut far enough and will not bend back. How far down on the fruit do you cut to make the petal flatten so beautifully?

After divide the kiwi fruit into 8 sections, when you cut, just turn the kiwi fruit against the carving knife. This will prevent you from cutting too deep into the centre. NOTE: you will need to cut in the centre of the kiwi fruit ONLY = 1 cm deep and stopping approx. 1 cm from the base. I will upload the close up techniques video how to divide and cut the kiwi fruit for you soon - please keep watching. Thank you very much :)
