Happy Valentines Kent & Shannon. My husband and I love to watch your videos together. I have cooked with cast iron for years, when my husband and I got together he didn't know anything about cooking or caring for cast iron. Now four years later he has fallen in love with cast iron and we have added to our collection over the four years. We have your cookbook and my husband and I have planned traditional chuckwagon meals for our family reunion camp week this coming summer. Kent you are one of my favorite down to earth cooks not trying to dazzle with French flairs or fancy ingredients but since I love to cook too I use quite a few dry mexican chile peppers but I know you like Ancho chiles and talk about their smoky flavor, I have not experienced that with Anchos and use chipotle for a little smoky flavor, this tells me you smoke your own Anchos?

Many Thanks again, we made these tonight and they were delectable. Your Mexican recipes are outstanding. Here’s a little story, my oldest daughters boyfriend was here for a few days and we sent him home with a big pan of CKR enchiladas and he shared them his Mexican friend. His friend asked if my wife was Mexican, he said they were spot on delicious. We use Hatch enchilada sauce, it’s good stuff. Your Mexican rice recipe goes well with any Mexican dish which we made tonight to go with the chimichangas. Thanks Kent and Shannon.

When I was a kid in California we used to go camping at crater Lake. We would pack up the Van, and mom would normally use the cast iron skillets, and make tacos On the old white gas Coleman stove. I actually forgot about this until you got me into the cast iron thing. When you was out in the open making a Mexican dish although it is burritos it brought back that memory again. Mama passed away in 2005. Thank you for your videos.. Your little dance always makes me happy. Please never stop

I live in upstate NY, across the Hudson from Albany (state capital) and I'd much rather get a fresh, made-to-order sandwich at Stewart's (local convenience store) while I'm also filling up my car. The quality is 100% better than Subway. I'd never liked egg salad sandwiches until my co-worker gave me half of hers. It was like a spicy deviled egg with bread. Very good. I'd never dreamed of exceptional food being served at the same place I could buy a pack of smokes and fill up my car, but I learned a lot about America during a few cross country road trips in my 20's. When I lived in Denver, there was a gas station owned by a Vietnamese family out in Englewood along Broadway that had the best beef and pork pho soups I'd ever had by far. That's quite a statement, because pho shops were a dime a dozen and the competition was high, especially in Aurora.

🤣😂 Hey there Kent and Shannon. Ya know, back in the day, I used to watch Laugh In, it was one of my favorite shows but now, we have the Kent Rollins Show. I had to wait until I stopped laughing so I could type this comment out. Ok, now then. Both the Chimichangas and the Mocha Moose look delish and, simple to make. That green (Verde) sauce sounds great also. But for me, I'd have to have some of that there sour cream to add to the green sauce. Just a dollop on top. Keep these fantastic videos coming our way Kent and Shannon. Hummmm. The Beagle had some dessert, but, didn't see him getting a chance to do his Quality Control job on the main course. We don't have one of those Ritzy convenient stores out here, all we have is Circle K, Quick Stop and a few others. Guess I'll just have to make my own Chimichangas out here. Thanks again. I never cared for refried beans, but the trick with mayo and butter did the trick. I did it one time when making burritos and I couldn't stop eating the beans lol. It was that good made it more creamy. I also told a co worker to try it. Thank you for sharing!
