Hello Catherine and Thomas, I made this for my family last night and it was a best seller! The tortillas were not soggy as some might say. Had a great flavor and I just increased my ingredients for my family. Just love your dishes and Thomas is so funny. I loved when he said we will make him behave! Too cute! Using corn tortillas for enchiladas is a must. Flour tortillas get to soggy. 😛

We don't think the flour gets soggy but use the type of tortillas you like.

Love the smaller portions Catherine!😍 And I love beef enchiladas!😘 When you've been cooking for a family for years, it's hard to start cooking for one or two! You get so used to cooking for a crowd and you can become challenged to cook for just you and your spouse. We kids took turns cooking dinner for our family of 5. When I got out on my own, I was still cooking for the whole family. Even when I got married, I still cooked too much. It took a while to finally scale it down. It's really nice to have more recipes for smaller amounts! There are a lot of households with only one or two people. Of course we all know how much the kids could eat if they dropped in for a meal.😋 But the best thing you can do is package up leftovers when you cook a big meal and put them in the freezer for when the kids show up!☺️ I used to make breakfast and lunch in large quantities and stack them in the freezer to take to work. It's a great satisfaction knowing you don't have to cook again for another month but I still cooked dinner when I got home. But making these meals far in advance had me cooking in bulk. Now that I'm retired, I don't need to cook so much. I even have a cookbook for Cooking for Two that I've had since I was married. Do you think I ever look at it to get ideas for meals?🥴 This is just another way that you help your viewers!😁 Thanks for sharing another helpful recipe!🥰

I cook for myself and my daughter ( we live together) and I we have always got leftovers, She will often take the leftovers to work the next day, but I don't care for leftovers. Catherine the enchiladas look so delicious! For refried beans I put a can of rotel in the beans, mix when heated up I added cheddar cheese melt the cheese and serve, great for dipping also. Have a wonderful day.

I never thought about putting taco seasoning in with the ground beef, onion & enchilada mixture. I use some tortillas called Golden Blend. They are a corn & flour blend. The taste of corn but pliable like flour. P.s., we have been empty nesters only twice, & then one of the 3 kids always move back in. 😆 enjoy when you can.
