Chef Dai: Not having tonkatsu I substituted Chinese hoisin sauce along with dark soy and grated pear. The results on top of the hamburg steak and fried potatoes (minus egg) were tasty indeed. Thanks for this innovative method of cooking a burger.

the way you turn over the meat makes it looks easy but i know, i can't do that and is there any other sauce to subtitude the tonkatsu sauce? japanese ingredient is hard to find in my town

+Fannia Haryani to be honest, if you leave it out of this recipe and use worcestershire sauce instead, it will still taste great. Even some BBQ sauce. I always think, "no rules in cooking", use whats available to you. Hope that helps Fannia. BTW, I should've just used a turner to turn over the beef, but didn't have one at home ☺️

+Chérie Tanzil Hi Cherie, I almost always use store bought "bulldog" tonkatsu sauce, as I believe most Japanese at home do too. But if you cannot get your hands on a bottle or If you just want to make it at home, its simple.... Worcestershire sauce x 3 tsp tomato ketchup x 4 Tbsp mirin x 3 tsp dark soy sauce x 3 tsp Japanese rice vinegar x 3 tsp English mustard x 2 tsp sugar x 2 1/2 tsp grated garlic x 1/5 tsp mix in a bowl, then its ready to use. Chef Dai: I love your videos and your recipes. My only objection is one of personal taste. I just can't get behind the seemingly common Japanese practice of including a soft yolk egg in so many dishes.

In this dish you don't eat the garlic anyway- you just want it to leave its flavour in the oil so peeling it would be a waste of time.

For some dishes that use whole garlic cloves, you leave the skins on so they dont get bitter. You can just remove them right before eating.
