More medium rare, since it is so thin it cooks rather quickly.

Actually the outside layers of beef are supposed to be marinated in a soy-mirin sauce for an hour before cooking. Without marinading, can't really call it Negimaki.

You weren't doing it wrong!!! It's vegetables wrapped up in steak. Try smearing some spicy pork sausage before wrapping up the onions carrot and asparagus. And use a nice homemade bbq sauce instead! Make it however the fuck you want!!!

Andy is from China but became a sushi chef, which isn't that uncommon... This is why when asked what "butter" was in Chinese he said "niú yóu" and not "batā." It's also why they said "gānbēi" and not "kanpai."
