Never get tired of hearing the words “we are eating good tonight Martha”. Get’s me all the time and it’s never the same without those words thrown in. This recipe works perfecto and I'm from Chicago and not too far from the old stock yards. And yes, you CAN KEEP TURNING! That's info from a chef friend of mine as well. All of your recipes and info rock. Made the Brunswick stew recipe a few days ago and my 93 year old momma loved it as well as my amazing wifey and I did. A firm favourite down here in South Africa. Pepper crusted fillet (except we pronounce the 't'). We braai (pronounced 'bry' as in Bryan) ours. It seems pricing comparison is on par here and there. Crusted fillet on a Weber using indirect heat is phenomenal, especially with a chimichurri sauce. Magic stuff and done to perfection! Greets chaps.

Looks good but I prefer the reverse sear. If smoke is something I’m looking for I will smoke for about 30min at the lowest temp. Then sous vide at 135 for 2 hours. After that is where I would pick up in your video.

Incase you do not know , the beef tenderloin filet is actually filet mignon. Also called Center cut medallions for other animals backstrap/ tenderloin filet.

Not entirely true. Filet mignon is a cut from the narrow front part of the tenderloin, as 2" steak medallions near the short loin.

I love the all the videos but I live in the middle of beef country in west Texas and beef tenderloin is around $35 a pound you can’t even find a ribeye for under $15 a pound
