Chef, I season and grill the Chain while I'm cooking the tenderloin. It looks pretty knarly, but do a rough trim and then it grills up nicely and is done before than the tenderloin. I serve to the folks who are helping do the cooking or my guests. Slice it about 1inch thick and serve it via toothpicks. It's a nice preview for the tenderloin. Give it a try.

What was your total cook time? I know it cooks by the temp, but I looking for a general time for a 6.5# Tenderloin. thanks.

I don't find the need to tie my tenderloins up, trim them good and you should be fine. I haven't noticed much difference in the final appearance of the roasted tenderloin. Chef Jason

I usually don't tie these when I cook them hotter and faster. When I go low and slow I will tie it. Chef Jason
