Some bees do actually get stuck in the honey when they harvest it, so there's a step that you strain it to get the bees, and bee parts out. It's why some people that are allergic to bees can't eat honey - if a lot of them get into it and get squished it releases enough venom to cause a reaction.

I collect perfume, and a huge portion of what we think of honey really comes down to the scent of it. People think floral, green, sweet, almost vanilla when they think of honey as a smell. The reality is that it's a very resinous scent, and when you're missing that component, even the most convincing dupe in terms of flavor is evident as a fraud. I imagine throwing in a few pine needles or some other resinous plant might round out any dupe and make it more convincing.

Hello Emmy, I clicked on this video because I love honey but can't have it. Let me explain... I have seasonal allergies and am unlucky enough to be allergicto grass, tree and flower pollen. Around my early twenties I noticed that watermelon made my mouth and lips itch. Then it was tomatoes as well, then cucumber... and around my mid-twenties a small bite of mango sent me to the emergency room with severe abdominal pain. The doctor told me I was allergic to melons, which I accepted...I just avoided them. But more and more raw fruits and vegetables made my mouth and chest itch (like, the inside of my chest, I don't know how ele to explain it), I'm talking carrots, broccoli, apples, oranges... even celery. The kicker was when I had a peanut butter sandwich that I added honey to, again the itchiness and pain. I was fed up. I googled "why does honey make my mouth itch?" and what I found explained everything. In some individuals who are allergic to pollen, their immune system can eventually get confused and react to uncooked fruits and vegetables as if they were still the flowers they used to be, and since honey is basically liquid pollen (from my understanding), the only kind i can have comes in those little packets from KFC because it isn't real. I tell you all this because I was hoping your recipe would satisfy the craving I've had for honey these past eight or so years without sending me to the emergency room, so finally my question: is the syrup still hot enough when you add the flowers to alter their chemical makeup in a similar fashion to steaming vegetables or baking fruits to make it safe for me to consume? If not, do you know of any other recipes that do not include flowers? If you made it this far, I appreciate your time and await your response. If you don't know, that's totally ok, I wouldn't assume you are a professional botanist, I just thought you might have more insight since you keep bees. Anyway, thank you. I really do enjoy your content. Cheers!

@@Kwijiboi I mean is that not kind of just what honey is?
@alicethebakingfrog21804 жыл бұрын
@Corbinite nope honey is the transformed natural sugar bees create using pollen.
@mitsoumi894 жыл бұрын
@@alicethebakingfrog2180 Pollen = protein for the bees collected as the powdery substance on flowers and its used to feed baby bees (larvae) after it stays some time in the hive for fermentation. Honey = dehydrated nectar (watery substance produced by flowers) on which bees add enzymes found in their honey stomachs. So @Will C honey is also not flower infused syrup. This also stands true from a chemical compound breakdown (e.g. sucrose, fructose etc.)

Loved this video. I've made this honey for years. We own a couple of islands here in Maine that are loaded with both clovers and wild beach roses. I usually add about 30% more flowers than my mother's original recipe, but it's sooo good. Makes wonderful gifts. Thank you for sharing, Emmy! :)

*Stares in maybe a vegan substitute* I’m not even vegan lol but still!
@lucid29574 жыл бұрын
These are definitely used as substitutes!! I tried making dandelion honey before and it tasted a lot like real honey with only a slight difference. And if humans can use an alternative and leave bees alone entirely, why not?

@@lucid2957 unless you keep the local bees in your own yard, care for them, and help growing these lovely pollinator. I'm an arthrophobe (person with unreasonable fear of crawly crickets that has exoskeleton especially those feet, and also most things associated with them such as buzzing and fast moving tiny black objects in the corner of your eyes) and watching emmy made me want to care for bee hives, she's just so lovely and positive. But I'd have panic attacks just from having one bees following me, let alone a hive of them. This recipe sounds great tho just for me imagining owning a hive and harvested them...
@mariliaishida16804 жыл бұрын
Noo beekeeping doesn’t harm the bees at all! Supporting local beekeepers is actually really good for the bees and the environment because it helps to keep them safe! This recipe as a substitute is fine, but most commercial ones are absolutely terrible for the environment!
@ShintogaDeathAngel4 жыл бұрын
@@mariliaishida1680 it isn’t good for *wild* bees which are the species that actually need the support. The bees from hives don’t pollinate crop species and can outcompete the ones that do. I don’t have anything against bee keeping but people shouldn’t keep them just under the illusion that it’s supporting the environment and ultimately our food crops.
@godzandheros4 жыл бұрын
@@lucid2957 we need to have commercial hives to keep the bees alive though, wild bees end up dying in the masses because their hives get to big and split, the bees that end up hiveless die and those can be hundreds to thousands of bees at a time. being able to control the size of hives and regulate that ultimately is helping the bees more than harming them.

I have a very similar recipe in a book called The Early Australian Settlers Household Lore. Instead of alum it calls for lemon juice for acidity, as you're making an invert sugar syrup, like golden syrup. And suggests other flower mixes, including fresh parsley

Growing up my grandmother made this every year using fireweed flowers. I loved getting care packages from her with a jar or two of fireweed honey. All of our Alaskan relatives have moved or died so there's no way for me to get fireweed flowers, but maybe I can make my own with roses or other flowers from the garden. It never occurred to me to try other flowers.
