Gravlax with beets
1 kg red fish (2 lb + 3.6 oz)
2 tbsp. sugar
3 tbsp sea salt
2 beets
lemon peel
30 g horseradish (1 oz, beet optional)
30 ml vodka (1 fl.oz, or brandy)
🐟Prepare gravlax.
1. Grate the beets on a fine grater, add salt, sugar and lemon zest.
2. Stir and set aside for 10 minutes.
3. Prepare the fish: remove the skin and remove bones.
4. Coat the fish with vodka and rub it with horseradish.
5. Place half of the beets on a baking tray and place the fish on top. Cover the fish with the second half of the beets.
6. Cover with cling film, put a board and a weight on top.
7. Place the fish in the refrigerator for 12 hours.
8. Remove the beets from the fish, rinse the fish and pat dry.
9. Slice the gravlax into thin strips and serve.
