Belizean Cassava/Yuca Pudding or Plastic Pudding

Cassava or Yuca is a vegetable that can be used to make a certain type of bread and puddings. It is very starchy so is makes this pudding gelatinous and sticky, but very tasty. This pudding is a lot like the Taro or Coco Cake already at this site.

I want to make this recipe this weekend but I wanted to ask you if we can use different extract. My husband doesn't care for lemon flavored things so I was wondering if I could use almond or vanilla extract instead?
