I'm going to make this for my bday! I made my dad a cake for his birthday back in april, everything was good except that the cake was too dense. I really want to try and have a redo. that's why I'm determined to make a cake and not buy one. Thank you for this recipe! It turned out beautifully! I added a little cointreau to the simple syrup as well and it rounded out the berries nicely. The only unexpected thing was my sponge fluffed up like crazy. It really overflowed my 10x2" pans on the first shot, so on the re-attempt, I split the batter 4 ways and I still has sponges about 1.5" thick. I used 3 of them as extra thick layers and the 4th became a second mini cake (that I didn't take to the party ;)). So note to those with 10x2 pans. I think I would've been fine with 10x3. Anyway, it was delicious, my family loved it, said it beat Whole Foods. The almond flavor, moist cake layers (helped by the syrup), and the creamy but not dense cream cheese icing were all noticed and praised. I think the only thing I'd change is reducing the amount of sugar in the icing. It could get a little too sweet if you didn't have a bite packed full with berries. Definitely saving this recipe for future use

I can only imagine i must've mis-measured the baking powder... I know this time, i rushed and knocked a bunch of air out of the batter, and my first round of sponge came out flat. One day I'm gonna get this thing right on the first round 😅. Anyway, I'm glad i saved your video. Despite my missteps, this cake is very worth every attempt!

So what you're saying is you want the whole thing but you shouldn't eat the whole thing lol ;) I have never tried to cut this Chantilly cake recipe in half. To cut it in half you would use smaller pans and I am not sure on what size would work and on the bake time. Hope that helps clarify a bit!

Hi Beatriz, technically you can. But you will have to have a bigger pan and it will bake a little different. I have never tried a bigger chantilly cake so I am not sure as to the size and bake time. Hope that helps. I hope you absolutely love this Chantilly cake! :)

It’s usually located near all the higher end cheeses like Parmesan and Gouda. And it usually comes in a plastic container. Let me know if you have any more questions ☺️

Hi Liz, everything needs to be room temperature except the heavy whipping cream. Make sure that the heavy cream is cold right out of the fridge. This will ensure that it whips up into stiff peaks. I hope that helps :)

Hello Deena , loved the chantilly cream, was super delicious. I made this cake for my wife’s birthday and she loved it. I do however request some feed back. My caked didn't rise and were pourus. Can you advise as to what that could be the result of. I followed your recipient to the T. It came out really flat to the point where I could not cut in half and was super dense. Please advise or give any additional tips.

In the video I mention to beat the eggs on high speed for 4 minutes without the sugar and an additional 4 minutes with the sugar. so your total time should be about 8 minutes. I think the eggs might have been under beaten.

If you have extra simple syrup leftover, you can add it to the top layer. You don't want to add too much since it might make it difficult to frost the top of your cake.

Unfortunately, this will not work with frozen fruit. When the berries thaw, all the juices will soak through the cake and possibly turn it into mush. So I would only use fresh berries here.

I’ve never tried switching the frosting for more mascarpone than what the recipe calls for so I’m not too sure how that would affect the favor and consistency. But theoretically it should give you similar results :)

You actually want to whisk the eggs for a long time so they are super light and airy. But when you add in the flour you want to be very careful not to over-mix.

Ms. Deena is it? I have a question. Did you create this recipe? And let me clarify what I’m asking. Did you create the actual cake layers recipe...yourself?? In all actuality-it really doesn’t matter but IF-you created that recipe for those- I just want to tell you.... I am an advanced baker and I have been doing so for about 10 years. My pastor and his wife convinced me to even sell my cakes. You must know how very...very hard it is to find a good yellow or white type cake. While this has the character (somewhat) of a Genoise and the omission any ‘fats’ (Cept for the richness of the fatty yolks) Ms. Deena THIS CAKE is FREAKING FANTASTIC!!!!!!!!!!!!!!! FABULOUS. Do you hear me??? FABULOUS!!!!!!!💣 I. I literally have to give a moment of silence.......😶 Due to no fats-typical Genoise has a tendency to dry out. I was prepared for this recipe to do tha’ same. You generally must syrup these types. First off-the cake mixing was a bit ‘backwards’ to me for a type of cake like this. Looking at the ingredients, I knew that even with the baking powder- a lot of the lift was going to need to come from the eggs. What got me was that the sugar and the eggs was not whipped together but that you whisk the eggs to a froth and THEN add the sugar!!!! Pressing on as your recipe called for...I didn’t think this was going to work but it actually gave my egg sugar mixture more fluff. It also got to my ‘ribbon stage’ quicker this my Kitchen Aid did not have too run to hard! I baked them in 2-10 x 3” cake pans and I’m glad I did because boy did those babies rise!!! I also halved the recipe so I could have three cakes because I didn’t think they were going to rise that far at first but I had already got the third one started so I proceeded to bake it. The one cake baked beautifully too!! The clincher was today when I went to construct this cake (and yes I made the entire recipe the Chantilly Cake because I was looking for something light for my pastor’s wife for our church gathering tomarrow) I torted the cake layers and tasted one of them. Ms.-I could not believe how light and how fluffy those cakes were!!! Even after sitting overnight. Totally unexpected surprise. The density was 👌🏾 PERFECT. Not ‘porous’ like Genoise can be at times but OMGoodness--when I put that cake in my mouth-naked-no icing no anything--it was freakin’ incredible!! Not only did it feel moist on the tongue but the flavor is perfect. That texture though--everyyyything. Now, I did add a 1/2 tsp. kosher salt and a 1/2 tsp. of Butter Emulsion...along with the vanilla you prescribed for the recipe. I always add salt to my Genoise and anyway these additions as you probably know does not change the schematic of this cake. This cake is sexy, awesome and it will be in constant use. Constant And sorry for the long wording but I did not know where else to review this cake.

Thank you so much for the great feedback :) and yes I created the recipe myself. The texture of the spongecake is inspired by what we Slavic people call “biskvit”. Almost all of my cake recipes use this method of cake baking. We especially love the light and airy texture it has without being dry :)

Lydia, i’m sorry to hear that! :( did you open up the oven at all during baking? Sudden changes in temperature could cause the cake to collapse.

Lydia Matheny hmm, that’s so odd. There are multiple factors that can cause cakes to fall. Sometimes if the flour has a little moisture in it, it can sink the cake during baking. Or if your oven runs too hot or too cold, it could also cause that too happen. I know some people use external oven thermometers because their ovens don’t show an accurate temperature. I hope that helps :)
