Ingredients
2 cups besan gram flour (available in Indian grocery stores)
2 tablespoons oil
2 tablespoons yogurt (dahi)
1/2 teaspoon salt
½ teaspoon chili flakes
1-1/2 tablespoon dry fenugreek leaves (kasoori mathi)
Pinch of asafetida (hing)
Approx. ¼ cup of water use as needed
¼ cup rice flour for rolling the roti
Approx. 2 tablespoons butter or ghee (clarified butter)

I made this recipe tonight. I substituted the 2 Tbsp of yogurt for 2 Tbsp of coconut milk due to dairy allergies. Besan Roti came out excellent!! great flavor, beautiful aroma. Thanks for the recipe & cooking tips!!! I'm going to enjoy this for a long long time!!

in pakistan, our besni roti has chopped onion, chopped green chillie, chopped fresh corriender, crushed anaardana, and we use 2/3rd of besan and 1/3rd of aata.... then we cook it in tandoor/oven and these rotis r not thin, they r a lil thick..and we butter it after it comes out. we eat it with lassi (butter milk) and achaar. its pure punjabi village food.

if you use aata flour it is not gluten free. Gluten free is free from wheat, barley, rye and in some cases oats.

I was thinking about this too. :) Since the yogurt is not being used to activate baking soda I suspect it's there more as a dough conditioner. It probably makes the roti tender, keeps it from being dry. I'm thinking that blended Mori Nu tofu might be a good substitute, the soft type. Banana might work too if you don't mind a little bit of sweet. I'm thinking of the possibilities of different flavors though. Banana with cinnamon and nutmeg or just plain without a lot of seasoning.

I have purchased Hing before, Took it home and placed it in the cupboard. The smell was so so so powerful. No matter what i did the smell always seeped out even if i double ziplock bagged it and put it in a jar it would always be such a potent smell. Would you suggest there to be a certain way to store hing or is it just a smell you have to get used of?

Just avoid it. It isn't a necessary ingredient except for an enhanced flavour.

Hi, I am visiting this channel again. I am learning "Indian" cuisine & am visiting many channels. The ingredients & methods are new to me. A lot of this cuisine is very frugal & vegetarian dishes never seem boring these ways! (We eat meat but have many meatless days.) I am learning more about the spice mace. Hello Majula, Thank you for your recipe which I’ve made twice. I think I shall now make it for a third time, but this time using the rice flour properly! I didn’t catch your comment about the rice flour, and took this to be one of the main ingredients! First time I had no rice flour so used Cassava flour, so I made it again when I had the rice flour. Now I realise that you didn’t put it in with the gram flour! It’s a good recipe...just need to make clear about the rice flour not being a main ingredient. My chapati are good but rather hard! I think I must be the only person who got it wrong!

Majula Aunty, thanks for this amazing variations of Roti for people who are allergic to Gluten. Me being one of them. I have one small doubt. Does asafetida not contain gluten? I think it does, as I have been avoiding this after reading some topics. But anyways, I am still going to try without Asafetida. Thanks again.

I put them in a small oven on the rack and finish the cooking rather than putting them on open flame. Turns out good. Not sure if the open flame is really necessary.

Aunty Manula, this looks delicious! I tried making this, and sadly, as it was my first attempt at making roti, it was not very good (due to my lack of skill). My rotis were kind of dry and fell apart while cooking them! They were hard after cooking, too. I think I messed up the dough. Do you think my dough was too dry? I also used soy yogurt. I would love to try again! Thanks, Aunty Manjula. :) You are the best!

Manjula - The brand of asafoetida (hing) that is gluten free is Frontier Natural. durgathakar's post is correct, only if the manufacturer used wheat flour as opposed to rice flour. However, Frontier Natural's hing is gluten free.

Ronen Levy I think the only dairy product used was butter and you can substitute that with oil or leave it out altogether.

Manjula, can these be frozen if made in a large batch? and if so, are there any special considerations as to how should this be done and defrosted?

+Jeniffer Ingrid Rose one way of doing it is once u make the dough u can keep in the refrigerator, just make sure you keep in air tight container or plastic wrap your bowl. the second way is the difficult one, if u want to roll all your dough you would have to keep the individual roti's in the air tight again with plastic wraps in between each to keep them from sticking. hopefully this helps :)

I tried it. The dough wont be firm, it was flaky. Not sure why may be cause I did not put the yogurt? Also from the skillet I put it in a toaster oven. Seems to work. Also this will be great with Natural Peanut Butter.

It's because there is no gluten to hold it together, because rice flour and chick pea flour have no gluten. Ummm...I'm still looking up stuff cause I can't eat anything with wheat in it, and wheat is in everything, sauces, soup, all cereals, and all bread are wheat. Anywhooo...Rice flour and chick pea flower are awesome because they have more fiber and protien than wheat. Putting one egg will help, or mixing different gluten free flours together will help too.

sid kumar you don’t have to use rice flour at all, it’s only helpful for rolling the dough.
