I make the brine while the foot is boiling... that way I have enough time to get it right before adding the feet!!! Looks great though!

This may sound strange but try adding a tablespoon of brown sugar. Should be refrigerated for at least 15 minutes.

No , No, No. That way too much salt! YOu could of season the meat before boiling .therefore there no need for all that salt. Souse it support to be zesty and spicy . I didn't even see any lemon or vinegar added to help cut some of that salt.
