soak in or drench with liquid. It is also
liquid, typically salted, used for pickling so you can pickle your fancy with whatever you like 😉

Ingredients:
Chicken feet
water
Juice of one lime
salt
minced seasoning peppers
scotch bonnet pepper
cup green seasoning
Chadon Beni (culantro) leaves minced
medium cucumbers sliced
Onions
Celery
Tip.
- make sure to pressure cook your meat for about 30 mins
-You have to let the meat sit in the juice for some time to allow it to react with the meat and give it that soft souse texture.

😀 My Dad used to make what he called Leather Souse! made with cow hide. Everyone loved it, we used to sell it at local cricket matches. 🌴❤💚💛🌴

My mom makes Chinese style pickle feet, it’s very similar but we use vinegar.

A lot if not the majority of Trinidad cuisine is Asian inspired. So a lot of our foods are similar in taste , process and seasonings This sounds great

You could boil water and put your meat in for about minutes then pour that off. That gets rid of the film and the nasty stuff. So now when you boil your meat, you can use the broth for soup.

Can I just used the water from the boiled chicken foot to finish preparing the souse since chicken foot is rich in collagen it means we are throwing out the good stuff?

No not the water you pre boil the chicken in

You can boil it for a bit then pour out that water, add more and then you can use a bit of that water in the spouse (not all of it).

Souse is delicious, but I have never heard chicken foot with souse. You young people has switch up all the dishes in the Caribbean, you need to call it another name. Souse is usually made with cow face, ears, nose and snouts likewise with pig head, face, ears, nose etc, but never have I heard about chicken feet. Chicken feet is for making dog food.
