I mean on the one hand you understand that there are some trade secrets but in general I like it better when chefs share their cooking methods. You pay for the expereince at a resturaunt I wont stop going just because I could put down the hours to make it at home for a slightly lower price. I find it a lot more enjoyable to eat at a good restaurant where I can also learn something cool from the experience for my home cooking.

Eating at an expensive omakase in the US would have the same quality and taste if you eat in japan. Even the cheapest take out sushi in japan is good ass hell. The only thing your paying for this expensive omakase is the jnnovation, the experience, and the ambience.

The cost is wprth it becaude he really uses quality ingredients, preparation and put care into it unlike those last restaurants on "worth it" that sprinkles shit like gold and caviar in the sushi for thr onakase simply to make it expensive af

In my home country of Papua Genea Ui, we have a dish here called Ambu. We get people to dance around in a hot sauna and they sweat a lot. We dont ask them to use deodorant on purpose. We collect the sweat to make Ulu sauce. People then dip salmon into Ulu and eat it as Ambu. It is very delicious.

I stayed at ebisu in Tokyo for almost two weeks and next to the train station is this hidden sushi restaurant. Walked by and only saw locals. Th next day I decided to go and try at least two things. Walked out eating six plates of fatty tuna that cost $3 for two pieces and probably almost a dozen of other plates of different sushi’s. That cost $1 and $2. Cheap and ate a lot. lol Greatest hidden gem ever discovered while traveling.

kaede yeah but what I’m trying to say is that the “non best” is still around that price if not a tiny bit lower, you will not find anything of that quality for that price here and I hate that. Sometimes even when you spend ridiculous amounts of money in London you still won’t get a meal that’s up to par

kaede yeah and I wouldn’t mind paying if I was getting quality food but it’s literally so hard to find value here, like in a restaurant a chicken burger might cost you £10 plus. That’s a joke let’s not even talk about fish it’ll cost £20 plus and trust me you WILL be disappointed.

It's always interesting to read about prices in the comments. I once had a gourmet omakase that costed $750 for 33 courses made from rare and/or exotic ingredients and prepped with secret techniques. It was very delicious and worth the money if you're doing it just as a high-end gourmet experience. I also have some contacts for meals upwards of $5K for extremely rare dishes using ingredients that are illegal in some countries.
