I just finished making your kimchi recipe. GREAT instructions, easy to follow. Made two substitutions, maple syrup for the plum syrup and store-bought vegan fish sauce. Next time I make it hopefully I'll have the plum syrup and ill also make your vegan fish sauce. It still came out delicious!! I can't wait until it's fermented the 4 days. I have made several different kimchi recipes. Yours hands down is the best!! Thank You!!

I’m not a fan of regular sour cabbage kimchi, but I’ll try your vegan version to see if it hits the spot for me. Fresh cucumber kimchi, daikon kimchi, and green onion kimchi totally opened the world of lightly fermented versions to me, and I really love making and eating them. I hope your recipe does the same for me.

I love my Plum Syrup, if you don't have it GET IT. It's a great investment. I use it for my Kimchi as well as Bulgogi marinade and a simple add it to hot water for a tea. Thank you for this recipe, I love trying all the different ways to make Kimchi

Making kimchi is like a little workout. But I legitimately believe you when you said this is the best kimchi you've ever had. I hadn't heard of plum sauce before. But I found an Asian store in a city that's a hour away that I love to go to. I watched someone make vegan lasagna with dried shiitaki mushrooms and walnuts. Since I specifically go there for Natto and gochugaru (the latter is for the spiral cucumbers that I enjoy). I was delighted that they also have dried shiitake mushrooms and a whole produce section that I plan on exploring next. Making your kimchi would be cool.

Just wondering bcz we have made some in one of those air tight kimchee containers and it is a pain to open and close and keep clean everytime you want to eat some. Joanne, thank you for sharing your culture with us. I think food is a love language for so many of us so learning about other people's food cultures is so intimate in my opinion. Im gonna try this but im gonna use Savoy cabbage instead of napa, it's got that iconic wrinkly texture but i can buy it locally grown instead of having napa shipped halfway across the planet.

Actually, I mention in the recipe that you can try using a different cabbage! Just watch out for the visual/taste cues--I'm thinking savoy cabbage will require far less time to get salty and pickled!
