Great tutorial. For those who like apricots, they add nice acidity to the mince. I soak them in rooibos tea before hand and let them cook down with mince😊

I agree with using apricots and either raisins or currants to the rice. I also use saffron in the rice. I doubt if it is traditional, but it gives it a little hint of flavor
