Hi Hai, Can we store the filling in the fridge after we're done? Would it be weird if we eat this while it cold? Why we have to unfreeze the dough before put them in the oven? I thought we could bake them right the way?

The gougeres can be filled and kept in an airtight container in the the fridge, simply reheat them in the oven for 5-10 minutes before serving. Also I found the choux puffed up a bit more if I let them thaw for 20-30 min

@@HaiCooking I see. My freeze dough are also puffier then the fresh ones. Noted and well thanks Hai for your response.
