Lovely dessert - thanks for sharing! I have a few questions: 1) How many people is the recipe for? I'm having 7 people over, so I'm thinking about adding 50% to each step. 2) Can the used pistachios be salted or do they have to be neutral? I'm thinking that the salty taste is a good balance with all the sugar in the dessert. 3) You're making 250g pistachio paste, but I can only see 150g of the paste being used in total. Is the last 100g just wasted? Thanks in advance

1/ 50% sounds good but I would double the recipe for the panna cotta and the jelly just to be safe 2/ I would rather use unsalted pistachios and then add salt later to your taste if desired 3/ My blender would not blend well with less than 250g pistachios, and you can save the leftover for another dish or as a spread or drizzle over pancakes, etc...

A xài iphone 12 pro, quay 4k 30fps, không flash. Đoạn nấu ăn trong bếp thì a bật hết đèn trần trong bếp lên, đoạn trình bày thì a tắt hết đèn dùng ánh sáng tự nhiên tầm 2-3h chiều

You can check it out here: kzbin.info/www/bejne/jXyXg2xpZ8qad9E . I usually make a big batch and keep in the fridge for later use. You can also use store-bought but it may not be as clear and the flavor is…well…artificial of course

The dome mold is 15ml per cavity (1.34 inches in diameter), and for the cake any ring mold bigger than that is fine

I just made the deconstructed strawberry cheesecake and it was epic!! Blew my families mind. I’m making this tomorrow night. Is any of it supposed to be served warm?

Thanks Lucas! Glad you and your family liked the cheesecake. For this dish the cake and coconut sago can be served either warm, cold or room temp and will be delicious in different ways. One thing is if you decide to serve warm I suggest serving the ice cream on the side so it doesn’t melt too quickly.

Thank you very much for the wonderful recipe. Please tell me why I can't make a quenelles? The consistency of the ice cream is more like puree 😿 Maybe the spoon should be hot, or should the puree be frozen longer? 🤷‍♂️

Yeah you should put the ice cream in the freezer a bit longer, when the texture is a bit firmer than soft-serve ice cream it's ready to go, like in this video: kzbin.info/www/bejne/Y2GsimN7rsSlesk

Dear Chef, thank you so much for a great dessert idea. I love a Disfrutar creativity. I think your inspiration was fantastic. I just used mandarin shell to do an appetizer: hamachi tartar, fresh wasabi, daikon, chives sprout, piece of mandarin marinated in mandarine juice-soy sauce-yuzu juice-lime juice-sake-sesame oil mixture. My guests liked it a lot. And now thanks to you I can do a great dessert. ❤❤❤
