Today, I’m sharing how to make a soft, moist vanilla cake! I shared how to make a classic vanilla cake about 4 years ago, but since then, I tested many times to make it even better, and finally… I feel it’s perfected💕 I’m excited to share the new version with you! Let me know how you enjoyed it with your family and friends if you tried it at home!
📌 The ingredients To Make Vanilla cake
Enough amount for 24 cupcakes or 1 8-inch cake.
• Granulated sugar 10.5 oz | 300 g (1 1/2 US cups)
• Salt 1/2 tsp
• Unsalted butter 4 oz | 113 g (1 US stick)
• Oil 4 oz | 113 g (1/2 US cup) *** Add half (Oil 2 oz | 56 g) to butter and add the other half (Oil 2 oz | 56 g) to liquids.
• Cake flour 12.5 oz | 355 g (3 US cups) or All-purpose flour 11 oz | 312 g (2 1/2 US cups)
• Baking powder 2 1/2 tsp
• Baking soda 1/2 tsp
• Egg 5.3 oz | 150 g (3 eggs)
• Milk 6.3 oz | 180 g (3/4 US cup)
• Heavy cream 2.1 oz | 60 g (1/4 US cup)
• Vinegar 2 Tbsp
• Vanilla 1 Tbsp
** For best results, measure ingredients with a scale. All recipes are designed with weighed ingredients using grams/ounces. Cup measurements are provided for your convenience. **
Bake at 350 F | 175 C (Preheated) for about:
• 33 - 38 minutes (for 2 8-inch layers)
• 17 - 18 minutes (for regular cupcakes)
• 30 minutes (for 2 8-inch layers when using all-purpose flour)
• 16 - 17 minutes (for cupcakes when using all-purpose flour)
* Adjust the time and temperature depending on the thickness and size of the cake, oven, etc.

I just used this recipe for valentines day cupcakes yesterday. The cake is like a cloud so light and airy. Perfectly vanilla. I just couldn't believe it. I made a freezed dried strawberry buttercream for the frosting. My husband ate 5 cupcakes in a row. It's absolutely perfect. You all must try it. Thank u for the recipe. I love all the recipes we have tried!!

I made thus cake its really good. I still have the recipe for your original vanilla cake. That one is my favorite recipe, and I only make it for relatives I care about or for myself. Lol. I always make your French buttercream to go with it. Incidentally, though, I found a recipe that uses whole eggs for French buttercream that way I don't have to worry about separating the yolk.

Hello Aya thank you for sharing this recipe. I have used it once and received so many compliments. This cake freezes very well too. Question would I be able to substitute this the granulated sugar for brown sugar I wanted to change the flavor a bit and add some spices to use as a holiday cake.

Hello Aya - I feel I can taste/smell the sharpness of the vinegar when using it as a buttermilk substitute in cakes. I was wondering if you thought buttermilk powder dissolved in kefir, would work for a softer more rounded flavor and still be acidic enough? I am not able to find whole buttermilk where I am, and the low-fat versions don't provide sufficient flavor in my opinion. I appreciate that it is a minor point, but was just interested to know your thoughts before trying. Also. it isn't completely clear to me if you butter the sides of your pan or just the bottom and allow the sponge to creep up and grab the sides for maximum lift? Thank you for your lovely recipes, I am enjoying them immensely - they are a joy to follow. Best wishes with your recipe development journey and thank you for sharing with us all.

Hafa Adai from Guam Aya! 🌺🌴 Thank you for your videos. I’m so appreciative of them, and you are right. There aren’t many videos that explain the science behind baking, and those that do, often sound complicated for a homebody like me who just likes to bake for family. I’m new to your videos as well. So can this vanilla cake recipe be converted for red velvet cake. The from scratch red velvet cake w/ butter frosting that I have requires a flour based paste that needs to be cooked and cooled completely before blending with sticks of butter. The mixture thickens and holds up for a few hours in our humid weather here as we often hold get togethers outside. I’d like to know your version if you have one. Thank you again and I look forward to watching more of your videos.

Hi Aya! I love the structure of this cake! I just made it again for a small wedding party and it was such a hit with the SMBC recipe!!! How would you recommend adding a different flavor to the cake? For example, for a matcha flavor, how much matcha do you recommend using? Should I just sub 1 tbsp vanilla for 1 tbsp matcha?

Wow congrats for successfully making a cake for a special event! I'm happy to hear that. I usually add matcha powder and reduce the same amount of flour instead or add more liquids (Milk in this case. You can dissolve it with a bit of milk beforehand or sift it with cake flour). 1 Tbsp should be fine, adjust the amount as you like!

What a great recipe! What type of oil did you use? It looks dark like olive oil. Also, what is the reason for including the vinegar?

I used olive oil! I only use it for oil just because it's healthier. You can use regular oil as well. And vinegar helps to create softer cake, reacting with baking soda.

You can do one batch or a little less, depending on how thick you want it to be! And you can alternate it with all-purpose flour but reduce the amount; I mentioned about it at the end of the video.

You can if you have to! Wrap double and store it in the air-tight container or ziploc.

Yes, the recipe is enough for the 2 layers! Or 3 - 4 layers, you can decide😉 Just bake for shorter time with them.

Thank you! Vinegar reacts with baking soda and helps to create a softer cake. Not a major difference but it just helps. I used white vinegar!
