I love the “crackling” effect. The Hyatt Regency in Chicago employed some Le Creuset braisers and Dutch ovens in their restaurant kitchen and they all had that lovely crackled “vintage” look to them them that showed years and years of continuous service. I would have paid money for those!

I found a great deal on a sage 6.3qt Le Creuset oval Dutch Oven. I made beef bourguinon last night for guests and it was perfect. The efficiency of cast iron is impressive- cooked really fast and the meat fell apart after less than three hrs. Cleaned up like a dream. Beautiful piece of kit that you can go straight to the table with. Spend the money.

I’ve used Staub and le Creuset and you can’t go wrong with either. I paid the higher price for le Creuset because I like the loud colours and interior. Seeing flavour pop off the light surface is very satisfying.

This was quite helpful to confirm I made the right choice! I purchased a Staub a few days ago because of the amazing sale price. I'd had my eye on a Le Creuset for months but something kept holding me back. I'm on a meat-only diet and getting very moist, slow-cooked meat is crucial for variety and being able to enjoy those tougher (and maybe less expensive) cuts. Thank you for this review!

I’ve had both Staub and LC and the textured surface of the Staub is kind of like a grill pan but on a micro level. My Staub, over time, has become more non stick, whereas the LC’s smooth enamel has basically worn off and become more sticky w time.

LC dutch ovens are mainly coated with white enamel which is good for making soup but Staub uses black enamel which absorbs oil and become non-stick. I guess your LC has white enamel?
@paulm2467
@paulm2467 4 жыл бұрын
I've had a LC for 35 years and it's enamel is perfect, I prefer the white enamel just because of the contrast, I think that it is easier to see the fond and easier to see when it's clean but I've never had the Staub (no need as the LC lasts forever)and it looks pretty good. I think the other advantage is that the LC is quite a lot lighter which is safer and more convenient.
@jamesaroeuett1567
@jamesaroeuett1567 3 жыл бұрын
@@paulm2467 There's nothing safer about a lighter pot. Also, thicker and heavier cast iron has superior conduction and heat retention properties.
@paulm2467
@paulm2467 3 жыл бұрын
@@jamesaroeuett1567 Try dropping one on your foot, lighter is clearly safer as it's easier to handle, especially for the elderly, it's less likely to be dropped and less likely to damage something or injure someone if it is dropped. I take your point on heat retention although it's a case of diminishing returns, the LC will keep food hot for a long time, the Staub for a very long time.

I have a Staub. Use it at least a couple of times a week. Sometimes 4/5 times a week (winter). Love it. Best cooking buy I’ve ever made. Use it for stew, ragu, curry, cassoulet etc. The black interior doesn’t discolour like La Creuset but it will get dull and off colour on the bottom. After I wash it and dry it, I take a piece of kitchen towel and wipe it with some oil. Like new again and makes it slightly non-stick. Buy any of them. Well worth it.

I have tried LC and Staub, and prefer Staub for its inside coating that makes food just taste better. The Dutch brand you reviewed didn't just have "some" of the drip points but a couple of drip rings which you didn't pick up on. These are for moistening the top of the food, as are the nubs. I have some American cast iron by Wagner that have similar drip rings so I am familiar with them. Good job.

Would not trust them again! Didn't even want a replacement they tried to give me. I wonder what you think of tramontina brand. These look really nice but unfortunately out of my price range. Also what size would you recommend for a two person family? Thanks so much for taking the time. I love to watch your videos

Sophie, so sorry to hear about your poor experience with Lodge! Chipping can be an issue with any enameled cast iron, but there definitely are better enamels out there. Unfortunately, I've never got to try Tramontina. After personally using inexpensive enameled cast iron and higher price enameled cast iron (both personally and at work) I'm a believer of you get what you pay for - the higher end brands like Staub & Le Creuset live up to their price tag and the quality makes it 100% worth it. Black Friday is just around the corner and we may have some brand name Dutch ovens at a very affordable price 😉😉😉 As for a two person family, I would recommend between a 4qt and 6qt size. Ok a bare cast iron is awesome and not hard at all to take of in fact it will only get better with time if properly taken care of I have one from the 1920's one circa 1915-1950 and one 1940-60. All of them work beutiful and you get a certain pleasure in cooking with something that old that still works as good if not better then a comparible brand new one. But enameled ones do have there place. A little easier to take care of and most importantly when your doing a long cook with high acidic foods. The biggest con with enameled it can chip and although more durable than nonstick by far you can scratch them with metal utinsals unlike bare Cast Iron.

Indeed it’s LE creuset and also it is not “cruisay” but “kreuzè”. You should also mention that in the lid of the staub you can put icecubes. That way the steam condensates a lot faster and your dish will be even more moisture and tender. Greetings from Belgium.

I couldn't afford any of these. So I bought a Lodge dutch oven for $60 at Target. I use it all the time and I love cooking in it. Since I haven't been able to compare my Lodge to the expensive brands I don't know the difference. One day, hopefully a long time from now I was told that I will inherit my step moms bright yellow Le Creuset. So until then I will happily use my affordable Lodge.

I just purchased a Staub Wide Oval Dutch Oven, 6 1/2-QT which should come in next week. I already have a round one and thought it would be nice to have a oval. My concern is an oval shape and round burners, did I make a mistake? I assumed the cast iron would distribute the heat. What are your thoughts?

Nice but not enough choices. I am experienced with Staub and Le Crusette. Both are nice. However I currently own a Lodge. I am more than happy with it. I have not used it for anything that the others would have done better. No it doesn't have a warranty but for 50 to 80 dollars I can buy 4 of them for less than one of the French models.

I have both Staub and Le Creuset. They're both great but, I've found over time the Staub holds up better. I used to fry chicken in the Le Creuset and one day I hadn't noticed but, a half dollar size piece of white enamel popped of into the cooking oil and while I was eating glass-like shards of enamel were getting between my teeth and gum. I don't have to tell you how painful that was. the white enamel looks pretty but, I'll never use it for frying again.

I've had the opposite experience. My LeCreuset pieces have held up very well over the past 7 years or so, just some discolouration. They still cook perfectly and clean up easily. Staub also has a black matte exterior option on some of their Cocotte cookware. Don't assume these are bare seasoned metal, they are definitely coated with a matte ceramic coating, inside and out. Most Staubs are glossy on the outside. I've had Le Cruset with the smooth interior light coloured smooth enamel, and it worked well for years. But over the years and a few accidental "burnings", the surface gets harder to scrub clean (with a non-scratch 3M scouring sponge). About once a year I needed to use "Bartender's Friend" to eliminate stubborn browned areas. Each year it got harder to clean. Still not bad, and it did not affect cooking, it just got harder to clean completely and became less non-stick than I would have liked or assumed. I just bought a round Staub 7qt Cocotte with their standard black matte interior and glossy "Grenadine" exterior like in this video. I have not tried it yet, but I will tonight (browning a whole chicken - then braising in a red Thai curry sauce). So I can't comment on long-term use, or ease-of-cleaning.

I have a three le creuset pans, a couple of staub pans and in the past I owned some no-name enameled cast iron pans (ie very inexpensive) and NOTHING has performed or held up like my le creuset pans. I'm all about saving money if I can get a no-name brand of similar quality, and I've scored often using that logic, but my no-name enameled pans stained and looked nasty no matter how I cleaned them within a year. My le creuset pans have been in action for two years or more and still look like new, both inside and out. Staub is ok but the finish they use on the inside results in more sticking and it does not clean up as easily. It has a fairly rough surface which holds onto "stuff" - I have to soak them then scrub them and I often have to do it again (and again) to get the bottom really clean, especially if I used them to sear before braising. My le creuset pans - I kid you not - can have whatever you can imagine stuck on after a sear or bake, I soak them for 15 minutes in hot, soapy water, give them a swish with a sponge and they are CLEAN. Nothing left behind - it all just falls off. I don't want to believe they are worth the exorbitant prices, but honestly? IME they really are. I have never cooked with such excellent pans. Save your cash and just get one if you must, but really, IMO le creuset enameled cast iron is the bomb of cookware.

A lesson in history: A Dutch oven is all cast iron only, which makes it suitable for indoor and outdoor cooking as well. It is subjected to all the inconveniences of cast iron such as rust and the obligation to constantly season the pot with oil. In the long run, the Dutch oven will always do the job but will stay sticky and oily, and is not suitable for any ovens or the dishwasher. A French oven par contre is technically the modern version of the Dutch oven claded in enamel inside and out. Only because of marketing purposes and not to confuse the consumer in the US that the French oven is called Dutch. More practical, flexible, and certainly more costly than it's Dutch cousin, the French oven is offered in many colors. Seasoning is not needed for this beauty, as the enamel coating does a great job of non-stick cooking. It can be maneuvered from the stove-top, the microwave to the conventional oven with ease. Dishwashing is no problem at all, and it can be used beautifully to display your specialties or on its own. The only downfall would be the extreme heat of outdoor cooking with open flames, which would be too harsh on the enamel, but again..why would you, with such a pretty thing?

If I’m going to have this thing for a lifetime then it better be durable. Will the ceramic chip if I accidentally drop the lid on or from banging a spoon on the side?
@EverythingKitchens
@EverythingKitchens 4 жыл бұрын
Hey AlergicToSnow, All enamel-coated pans have the possibility of chipping if accidentally dropped. I will say that these pans we used in the video are probably the highest-grade enamel coatings on the market - these pans are used by our employees at Everything Kitchens on a regular basis and I haven't seen any flaw in the enamel. I personally have a vintage Le Creuset skillet in my kitchen and I love it - it did have a couple of chips in it when I purchased it (it is over 50 years old), but have not had any damage to it for the 6 years I've owned it. Some years back, America's Test Kitchen also said the Le Creuset also was the toughest and most durable enameled cast iron surviving plunges in cold water out of the oven, metal utensil scrapes, and banging on the sides of the pan with utensils.
