If this is the first time you have ever seen paper wrapped chicken, you must be thinking that Chinese are weird. Haha. Actually there's a reason why the chicken is wrapped in the chicken before we cook it. It's to seal the juice of the meat in so that your chicken will remain juicy and yummy. You gotta try Roland's paper wrapped chicken. It's 100 times better than the most famous paper wrapped chicken in Singapore. No joke.

Ingredients:
Makes 14 pieces
Marinate chicken with these ingredients first:

2 pieces of chicken thigh meat (520g in total)
A few dashes of white pepper
2 tablespoons of oyster sauce
2 tablespoons of light soy sauce
2 tablespoons of fresh ginger juice
1 tablespoon of concentrated chicken stock
2 cloves of grated garlic
2 pieces of spring onion (stem only)
1 teaspoon of sugar
Other ingredients and stuff you'll need

Dale Wright - yeps, ‘en papillote’. Usually with fish, I’ve never seen it with meat before so it’s interesting, especially because the parcels are cooked in an oven and not deep fried. Italians call it ‘al cartoccio’

Hi, you can set the temperature at 180degrees celcius for 10-15 mins. Do make sure that the chicken is rested at room temperature before you air fry them so that they will cook evenly. Your mom is so blessed to have you kids. Happy cooking.

Hi, can you explain what you mean by “two pieces of chicken thigh meat”? Because there’s no mention of chopping into portions or how big each portion should be. Are you referring to boneless chicken thighs?

Yes you can but abit dry not as moist. And make sure to use greaseproof baking paper not the one for lining cake. Reduce tempt as airfryer can be hotter and use lesser cooking time.

Hi Roland. I have marinated the chicken and put inside the fridge for 2 hours. Do I still need to wait for 39 to 40 min after I remove it from the fridge? Or I can staright away to do the cooking. Thanks

Hi Eric. The purpose of removing the meat from the fridge and leave it in open for a while is to bring the meat to room temperature so that it’ll be cooked evenly. Maybe you can wait for 15 mins before cooking?

Hi Ange, there was minimal splattering for us when we were cooking this. The purpose of wrapping the chicken in the paper is to protect the chicken so that it can cook in its own juice --- which makes really juicy chicken. You should try it. Happy cooking!

ATOM AU I never heard him say it was a side dish, my reason for saying this is because the only similar method I have seen used was. For cooking individual portions of fish though in this case it was for example a filet of white fish, seasoned then placed on a few slices of lemon possibly with some lemon juice added, wrapped in baking paper and baked in the oven or steamed. The same dish works really well if you wrap the fish in filo pastry instead of baking paper and baked in the oven. It would still only be part of the overall meal and it would be a single person’s portion of fish not just two bites and it’s gone.
