Does using a small amount of alcohol in a dish make you an alcoholic? I don’t drink at all, but frequently use wine etc in my cooking and the alcohol evaporates anyway, leaving a wonderful taste to the food.

I love that you gave a suggestion on what to replace the white rice wine with, sometimes us muslims want to follow recipes like this but when they use wine or alcohol we don't really know what to replace it with so we avoid the entire recipe altogether

Late comment, but may still be useful: Usually, the cooking wine is used as liquid filler and to make it a bit more potent. Potency is optional, and the liquid part can just be replaced with water. If there's no additional sugar already in the recipe, you can add a bit since some cooking wines are a bit sweet (usually rice wines like sake and mirin)

@@gameslacker2711 glad I could help! Note that this mostly applies to asian dishes that use "cooking wine" or sake/mirin specifically. There are a lot of European dishes which use red/white wine as a large part of the dish for flavoring, and in those dishes it's not super optional. But there are plenty of delicious non-wine pasta dishes anyway so not a huge deal.

I'm an ABC (American born Chinese), and have been eating home cooked Chinese food all my life. I don't notice a huge difference between using cooking wine and not, so it's not likely you'll notice it either. It's delicious either way :)

This is true Chinese cooking. Chinese American food is too complicated. When I tasted in China usually had just a few ingredients, this Chinese chicken with onion and oyster sauce recipe looks very nice. Good job!

Normally in a Chinese meal, other than a meat dish, we will have another vegetable dish and perhaps a tofu / egg dish or soup. If this is the only one you intend to have with rice, then you can just follow the recipe exactly. It’ll fill two of you up nicely.

@@spicenpans Thank you so much for replying, and so quickly. My Wife and I love Chinese cuisine and the cost of eating in a restaurant these days in the UK has almost doubled in the last year. Cooking at home is proving to be a lot of fun, and we are able to still enjoy our favourite tasty meals whilst saving money at the same time. Every day is a school day for me! Loyal fan watching from AUSTRALIA 🇦🇺. Chef please clarify cooking rice wine ? In this recipe it looks clear, is this different to the Chinese cooking wine that’s dark ?

Thank you so much once again :) Yes Chinese white rice wine is different from Chinese cooking wine. The former is made from white rice but Chinese cooking wine is made from glutinous rice. Usually, Chinese cooking wine is used towards the end of cooking to elevate the fragrance of the dish. Chinese white rice wine on the other hand, we usually use it to remove any funky taste in the meat and also to increase the fragrance of the dish. Unless the recipe calls for it, avoid cooking Chinese cooking wine for too long because it tends to turn slightly sour. Hope this helps.
