I use both side of the box grater because we like the stringy crunch with the more fluffy center, try it you will love it. I also add onions to my latkes

Very nice. I don't use ice in the bowl of water but you are right about the starch in the potatoes oxidizing quickly. Also I've had good luck with ordinary flour in place of matzo. Hope you'll take a look sometime. I like latkes that have 'stringy' edges, too. Can't get that using mashed potatoes like so many cooks do. Thanks for the great ideas!

Rather than adding meal, my mom used to divide the mix into two balls, then squeeze out as much water as possible into the sink, catching what fell away into a colander. A bit tricky, but always led to amazing results....

I add diced onions and a small amount of garlic. Also paprika. You can also use Panko and a bread binder if that is Kosher not sure. Also before forming the latkes, squeeze out the access water from the potatoes. It helps to make them stay together.

No, it’s not like hashbrowns. You want the starchy moisture to help them stick and keep the inside moist and fluffy. The steam from the moisture is what makes them soft and fluffy on the inside

There are different schools of thought with latkes-some squeeze out all of the juice,some just add more matzo meal + flour to dry up the liquid- some grate the potatoes in water to prevent them from getting gray and some grate in an onion which also keeps the color white- I have noticed that when the latkes are hand grated and not on a food processor they come out tastier

I luv Food you can get in a lot of grocery stores, I don’t know where you live but here in Los Angeles I believe Whole Foods carries it, also if you have any actual kosher deli’s or stores that have a kosher section that would be a great place to check, it would be in the place with like cream of wheat and oatmeal and those types of things and grits, and if that doesn’t work Amazon will sell it for sure you can always go that route but you’d probably get more for your money if you can find it at a place

I never understood the use of canola oil. Peanut oil is superior in just about every way for frying. Unless you're allergic.

Canola oil is cheaper and can be heated to a higher temp is the main reason I use it.

Yes you can! Best to let cool on counter and right into freezer if you have space it is best to freeze on a tray in a single layer then once frozen you can stack them in a bag or container.

I think its exposure to the air that causes the cut/peeled potatoes to brown. Oxidization? Covered in water there is no contact with air. Not sure if the temperature of the water has anything to do with. You're welcome.

I didn’t see you squeeze the potatoes , I liked the way you made yours , I have seen many other receipes all very different , some add flour , another added the starch from the bottom of the bowl once draining the water and no eggs , too many different ways , I prefer yours .

Full of omega 3s, look it up. All oil is processed. Cut an organic apple in half and it becomes processed. If you peel a potato and grate it becomes highly processed.

This recipe didn't produce "a lot of latkes" as stated. It was only a few...hard to judge the number of potatoes and other ingredients needed to make about 50 of them for a party.

Those look absolutely delicious, however, you could save a lot of time and improve the nutrition and flavor by not peeling the potatoes. All the actual nutrition of the potato is in the skin. The greater will make them so small that they will be insignificant to the texture. I make potato pancakes two different ways and one way is similar to what you've done. The other is an instant potato pancake with potato flakes and flour and egg and spices. Those are not nearly as flavorful, but it seems like that's how they do it in some restaurants. They seem very similar. Check my channel for lots of different things.
