Bro, if you over-thicken your cream sauce, add a little milk or water. The sauce won't break with the heavy fat content. Love your recipe.

A mature male redfish is approximately 28" long and a mature female is about 33" long. Texas has a 20"-28" slot, which I don't disagree with. If Louisiana would go to a 20" minimum, it would take a year to catch up, but I think it would make a huge difference in the quality of the population. Redfish grow extraordinarily fast and reach maturity in 3-5 years. Even one extra year in the water would make a huge difference for the fishery. I know it has in Texas. During a redfish tournament last year, my co-angler and I caught 3 X limits each of reds in one day using only artificials and had numerous undersize fish we threw back plus limits of speckled trout. It's not often that you catch redfish until you're tired of catching fish.

Texas also doesn't allow the pogy boats to catch near the same limits and nowhere near their coastline like Louisiana does. Even if you take out the by catch of breeders it is a huge dent in the prey base for breeding size reds.

If people would quit only taking 16-18” redfish then we wouldn’t have a shortage of that size fish . 9/10 people in Louisiana won’t take anything over 20” yet they cry that the 16-20” are harder to find. Even the people who don’t fish but like redfish have told me they only eat 16-18”, we have a mindset problem here in Louisiana not a fish shortage. More breeder size redfish seen the last few years than anything so they are clearly reproducing every year just for their juvenile size to be the only redfish harvested
