The beef tripe soup is perhaps the most popular dish in Bulgaria.
Many people usually eat this soup for breakfast.
There are two versions, one based on yogurt and the other that is prepared with milk.
According to experts who know good drinking, this soup can alleviate a hangover, since it is served with a lot of garlic with vinegar and ground chili peppers.
The products are:
1 kg. beef tripe -
2 egg yolks
200 g of yogurt
1/2 liter of broth from the cooked belly
70 g flour - 5 tbsp.
30 g butter
250 ml. milk
2 tsp salt
FOR THE CARROT OIL:
1/2 carrot
80 ml. oil
2 tsp paprika
FOR GARLIC DRESSING:
5 cloves garlic
60 ml. wine vinegar
30 ml. water
1/4 tsp sol
