@julianvega26779 ай бұрын
The soaking can reduce the cooking time of the beans by half and also allows difference enzymes to leak into the water as then discarded for people who experience digestive discomfort when they eat beans. I always want to do the soak method, but I just don't plan well. Sometimes I soak for a few hours just before I cook.

Best pinto-bean-in-an-instan-pot video I've seen of perhaps 8-10. I especially value your comments about salt. Such a crucial ingredient with a number of effects. But the one that helps me most perhaps is that adding salt before cooking can prevent the beans from cooking completely. I think that must have been my problem that no matter how long I cooked some beans, they wouldn't soften. Thanks you for the help.

I'm a very southern Indiana Hoosier. In fact, only one mile from Louisville, Kentucky. My mom was ♥️ from southeastern hills of Kentucky. She always made the very best pinto, navy, & great northern beans. ALWAYS with real homemade cast iron cornbread. Always adding one tablespoon of good oil to the skillet, then heating the skillet up to 400° & then pouring cornbread mixture in 🔥 HOT skillet first, hearing that awesome sizzle first, then proceeding to bake. We never cared for white cornbread. Always yellow. 😁 Must have a hamhock, or a big ham bone !! 😋 I've never heard of adding brisket. Sounds so delicious. My daughter refuses to eat pork (ever since she saw a video showing how hogs/pigs are treated) so, she'll definitely love the brisket addition. I can't remember ever eating any beans without a fresh quartered onion. Mmmm. Other than salt added, & pork, I've never had tex-mex beans. Thanks so much for this video!! 👍🏻 Have a beautiful evening, & weekend starting soon. God bless you, Mary. ✝️

Being from New Mexico I just pressure cook my beans with ham hock or salt pork for 45 minutes is a standard pressure cooker. They come out better tasting than when I use same method for the instapot and I tend to need to cook them longer for similar results. But they still taste better cooked the "old school" way. I rinse but dont bother to soak them.

Dickinson Salt, which is taken from an ancient underground ocean that evidently flowed underneath the ground in WV? It's located in Malden, WV (near Charleston). They have an online site where you can read their story and place orders, etc. We bought some in bulk, as it's a local salt resource~~but it's rather pricey, so I use it sparingly. I thought I'd mention it. :) God bless!

By letting the pressure dissipate naturally the beans continue cooking while setting in the heat. That makes the beans more tender. My mother taught me that back in the day when she cooked pinto beans in a pressure cooker on the stove top.

When releasing the pressure if doing a quick release it helps to put a folded towel over it. Then it catches a lot of the steam and you can release it through the towel so you don't burn yourself. :)

Such a great vid! I always learn so much from your vids. To do two pounds of pintos with ham hocks in my 8qt Instant Pot, do I just double the recipe? One thing I did want to make certain of is about the ancho chilis. Are you referring to a chili powder made with ancho chilis and other ingredients, or are you meaning just powdered ancho chilis? Also, I see a lot of comments from people saying there beans don't get fully cooked without soaking. From what I understand, older beans (several years past harvest) do not soften as well as younger beans. Also, water quality can seriously affect cooking time. If you have hard water, the calcium and the magnesium bonds with the cells walls of the beans, making them take a lot longer to cook. I wonder if beans produced in a hard water area require longer to cook, even if the cooking water is not hard.

On an American Test Kitchen video on baked beans the ladies said that soaking the beans in brine prevents the skins from breaking and the beans from splitting. I have found that to be true with navy beans, however, not with other less creamy beans like pinto and kidney beans. I have also found that cooking pinto and kidney beans in salted water can leave some beans tough. That seemed not to happen with navy beans. It comes down to trial and error. For example, the cooking times in these videos never work for me. For me cooking presoaked beans in the Instant Pot only takes 9 to 11 minutes on low. Otherwise they turn into mush. 🤷🏼♀️

Hi Mary. I have loved watching your videos and have learned so much from you. I have a question about beans from long term storage. I have some that are in a 5 gallon bucket that are several years old. We opened them and they look perfect. The problem we are having is getting them to soften. The lat time I tried cooking them in my IP it took over 2 hours. And thoughts or experience with this? Thank you.
@MarysNest3 жыл бұрын
First of all, thank you so much for the kind words! And yes, I do have experience with softening old beans. This where salt actually comes in handy! The first thing you want to do is soak your beans overnight in a salted brine. This is not so much for flavor as it is for the salt to help to begin to soften the bean. You will want to take 1 pound of dried beans (2 cups) and soak them in 10 cups of water with 2 tablespoons of salt. Then, the next day you go to cook them, you want to rinse the beans very well and then add 1/2 teaspoon of baking soda to the cooking water along with the soaked beans. Yes - baking soda does leach out some of the nutrients in the beans but when they are old, you need the help of the baking soda to soften the bean. These two steps should really help. Also - remember not to add any acid to the cooking water when cooking old beans. It works against the softening power of the baking soda. Also, if you have hard water, use bottled water. Sometimes the minerals in hard water can halt the softening of the beans. Hope this helps. Love, Mary

Interesting - this instant pot turns the proper way (clockwise to close, anticlockwise to open). Both of mine (cheap Chinese knock-offs) do it the opposite way.. 😁 Mine have all sorts of buttons on the front, one says "Borscht" - strange because no one around here has ever heard of Borscht - and there are no instructions! Still, I've managed to use both of them successfully, and I've found they're fairly easy to repair. Other weird buttons - there's one for Pizza, and another for Yogurt. Otherwise they work pretty much the same as this one.

We have the same dishes. That pattern is so hard to find replacements for. I love my dishes.

if you soak them overnight you can have them ready in 15minutes. If restaurants invested in this technology and cost of power was reduced, overhead costs and climate sustainability can be achieved especially in the developing global south. No need to be using carbon dense materials like firewood to cook food especially beans without replacement of trees. Most homesteads use charcoal because of the high costs of power connection and investment costs. Hopefully with time things can change. Thanks for uploading

All beans and grains have all essential amino acids... though beans are low on one and corn is his on what beans are low on...

Can you use this method with a stovetop pressure cooker?

I would imagine so, but I’ve never tried it. It’s probably worth experimenting with. Love, Mary
