This KZbin series "how to hand-raise a mouse" talked about trick training. They said mice don't JUST do it for the treat--they need to feel accepted by the mice/people they love, and mouse training is a way to give them that acceptance and praise. When they figure out how to do a trick, it's like solving a puzzle to them, and the treat, as well as being delicious, is also a way to express that praise that they want. They are more intelligent than they look (hence being trainable in the first place) and extremely social creatures.
