That "Brazilian" tea is called "Mate" and it's very popular in Argentina and Uruguay. It's very common to see people everywhere drinking mate, you should try it, it's really good.

To avoid the Chimarrao (Erva Mate) from tasting too bitter, make sure you use cool-warm water at first. Once the mate has set for a few minutes, add hot water, like a tea. But it is a bitter drink, so it will always be a little bitter. If you prefer something sweeter, you can try Terere, which is the cold and sweet version. But you will need a different kind of Erva Mate.

You can use some bread to flush the last of the meat from the grinder. My Nana use to grind the meat then the onions and garlic and finally the bread to make picnic burgers. She would also sometimes grind cubed cheese and crispy bacon after the meat and before the onions and garlic for special events. One experiment i tried was chopping the ingredients in a blender verses using a grinder, much different texture and suprisingly flavor even using the same base ingredients. Not bad different but i preffered Nana's grinder method, maybe just for those priceless memories.

Isn’t picanha basically a cut of top sirloin? So wouldn’t minced sirloin yield the same texture and flavor? Have you ever made a burger using minced tri-tip? I think that would make for an awesome burger. Maybe grind in a little Wagyu lard for an extra measure of fat and flavor.

Volume levels on your vids are a little high compared to my other fav BBQ channels, love your cooks but when they start my speakers boom!, couple of dB's down would do no harm, I could tell all the others to turn their levels up a bit but I'd have to comment on about 50 channels so I'm hoping you might take one for team BBQ, congrats on new house by the way.

While cutting any meat, its better to keep the fat cap at the table, it makes it a lot easier to cut through.

How cool! I must say I don't think I have ever eaten (or seen) a full picanha burguer here. The restaurants and recipes that I saw use a lean cut of beaf, like "acém" (that I think is brisket or something on the front part of the cow) or fraldinha (skirt steak) and use trimmings of picanha's fat cap for the blend. I would guess that one should be particulary wealthy to grind up a hole picanha (here is as ,sometimes more, expensive as/than filet mignon). But, man, does the burguer looks tasty!!!

Dry-aged picanha makes for great steak, but certainly also for big burger [patties like that. However, if the patty is made with such precious meat, I think less is more as far as toppings. Don't you think the barbecue elements (mushrooms and barbecue sauce) overwhelmed those steak-like patties? I woulda skipped the mushrooms and just added ketchup to the Methadon. But who am I to say shit. Those burgers look heavenly, to say the least.
