At 3 minutes 50 seconds you said they were right at the temperature you wanted them to be at before you sear them. I'm curious what that temperature was you didn't mention, it I'm thinking that was an oversight.

Awesome looking pork chops! I make them pretty much the same on my pellet grill too! (You have to try Captain Rodneys Boucan glaze,) it’s game changer. I use it on my chops and it’s out of this world. I do use bbq as well. Check it out. Really great cook! Cheers!
