This is without a doubt the best cooking channel I've ever seen. This is how real cooking is made of. Everything is so perfect in these videos...from the beautiful sceneries of the nature landscape, to the tradicional and rudimental kitchen utensils, to the bright, vivid and vibrant images, that give life to the picturesque stage setting. It reminds me of the old way of cooking, like our grandmothers and grandfathers used to do it. Taking time, giving love and attention to the cuisine, using only healthy homemade and natural products. And the calm of the videos, with no one screaming, stressing just to create views, like so many out there do, that leave us only with the sounds of the surrounding environment...like music to my ears. You can feel the enjoyment from the people there. Savoring every moment and every step of the way. It's like I can almost smell, feel and taste the food...this is Art, this is the true Soul Food channel!

This looks so good I’m going out right now to get a fire started. These videos have gotten me to cooking outside more and more. I’ve seen people putting coals on top of a Dutch oven but have never seen anyone make a fire on top tepee style. So cool! Love this video, thanks!!

They are so swamped with orders for their knives, which are hand made, that it will take a while before they get back to you but they will. I got the pleasant surprise of knowing I could order that custom sheath / case for the knife as well and I got my order placed :)

Yes actually in France we traditionally add cheese but only on the top of it to make it grilled and crispy, in french "gratiné", that's why it's called "Gratin", and "Dauphinois" because it's a recipe from "Dauphiné", a region in France.

I'd say we "often add cheese", rather than "traditionally". As I said, the traditional recipe of gratin dauphinois doesn't use cheese at all, the crust is cream & butter.

I think if you don't let the oil get too hot you can touch it because the thin layer of oil protects your finger from the heat of the pan.

If you look closely. The side of the pan closest to the fire was sizzling while the rest was not. Sure his hand grazed that area for a few seconds, but it's not enough to burn him

Ali, I went from kitchen and construction work to working in a pharmaceutical laboratory. Not only can I grab hot things in the kitchen, but I can melt dry ice in my hands. It used to amaze people that I could do that with out getting a burn from the ice.

Badicus Vibesimus no mozzarella (please !). In France we use Emmental or Comté. Those are hard cheeses, with delicate and fruity flavour.
