I've been out of the business for quite a few years but I used to have to explain to people that the ranges I sold were for restaurants only. The "professional" models with the same brand names are actually "residential" units. The units I sold were not intended to have cabinets up against them and needed much more powerful grease trapping hoods over them. (With fire suppression by the way.) But they were cheaper since they had no electronics. And they had standing pilot lights. Oh yeah, no broiler either. For that you had to buy a salamander, a dedicated broiler wall-mounted at eye level that can reach temperatures over 1500 degrees.

Super helpful video. Thank you. Looking forward to the dual fuel. It’s a shame there isn’t a “superior” in the all gas. I agree with that-no range is perfect. For me that would be 25000 BTU max, 100 and 340 BTU simmer, infrared grill, with griddle and French top options, with a self-cleaning oven, with steam, with true convection, with all grill grates dishwasher safe, and oven grates self-cleanable, with enough size to fit a full sheet pan. As far as I know that range doesn’t exist.

I'm in the middle of renovating our kitchen, and greatly appreciate these reviews and talking points! Your honest opinions based on your hands on experience, coupled to your service calls volume is so very helpful in guiding my decision making. We rarely bake, and mostly roast and broil - so the power of an all-gas is where I'm headed. I love the open-style burners, and really love the power of the BlueStar Platinum. I've got space for a 60", and would really like to have the Platinum powered open burners AND a 24" griddle. I've narrowed my list down to a Platinum 36" coupled with a Nova 24" (all griddle), but have also considered a Capital Appliance Cullinarian. Do you have any experience with Capital? How do they stack up against the A-tier BlueStar?

Thank you....we sold Capital 15 years ago. I didnt know they were still around. At the time, they were similar to BlueStar with high output open burners. BlueStar has more options and of course colors....Similar ranges. Which is repaired better where you live

The problem is that when you are shopping for a 60-inch all gas range, you are extremely limited with choices. Would Yale give an opinion on who the best 60-inch would be?

Depends on how you cook.....Grill/Griddle: Wolf Steam oven interesting? Thermador. Best gas oven? BlueStar. Best output: BlueStar. Best all around: Wolf dual fuel
