My late wife and I had an opportunity to visit Singapore when we were in Hong Kong about 30 years ago and we didn't go. Now, I am kicking myself. Always do the things that you want when your have the chance. Someday is too late.

I absolutely love Bak Chor Mee = Minced Pork Noodles! Great video Mark! The sourness is actually from Chinkiang Black Rice Vinegar which to me is like a stronger more robust version of the western Malt Vinegar. I always douse my noodles with it and spam loads of extra sambal and chilli slices on it.

1min 25 sec of the video there is a newspaper clipping at the glass panel which translates to the stall being so famous ,people even cut the queue for it,resulting in a fight between two men .Mark looks like you made a great choice in dining here.

Mark definitely loves his spicy food. If the food has some heat to it, he gives his unique signature move to it - demonstrating how he really digs it. Otherwise its just a vigorous head nod. Mark you need to add more though - just to help us avoid it if its really horrible. Last thing I want to do is buy something I won't enjoy.

hi mark, this delicaly is usually ate as breakfast and lunch . 7am-12pm for singaporeans. so the crowd during that time period will be HUGE

That piece of fish is salted fish, Mark. Ddiligent hawkers usually lightly toast it for that slight smoky and crispy texture :)

I waited more than half an hr today for my bak chor mee. Price has increased. $6, 8 and 10. I ordered $8 since i lined up for more than half an hr. It was good as the meat was very fresh. But i think it tasted better during the 80s when everything was more cheaper. Maybe about $2

In Singapore and Malaysia, we tend to add vinegar with sauces to egg noodles (ba-mee variety). It is suppose to contrast and brighten the flavours of the egg noodles. And wanton skins loves to absorb sauces, so it would have soaked up the vinegar. :P

As a Singaporean, I finally ate it for the first time in 30+ years. Queued about 50mins despite a short number of people. Noodles were okay-ish to me, and I felt it was kind of overhyped. It’s nice but I guess it’s pretty average 😅
