First time I've ever heard Hokkien mee compared to risotto. 😀 I get it. Mushy noodles are great for certain dishes but I definitely prefer the springiness of the wantan noodles. Excellent series, guys. Short trip. 😕

Almost 10 eggs with huge amounts of bean sprout & noodles for the Hokkien Mee. Since the Char Siew is not red, the meat is overpower with marinated dark soy sauce. I'm thinking where can I find some cendol this weekend for my refreshment. Since won ton is the star of the noodle, he didn't tell anything about it other than the noodles and the Char Siew.

Thick rich broth from this HOKKIEN MEE is one of the unique kind . Most hawker chefs do not offer such generous broth. BEST paired with a bottle of Local iced chilled draft beer.

Can vouch for the fact that the fried hokkien mee started in 1968 but they shifted from across the pathway which is now an open field. That wet market has been there since that time too but the 2nd floor sold mainly dried foodstuff back then. They used charcoal with a fan directed at the stove back then, and it was served wrapped in opeh leaves.

Hokkien mee is defo a comfort food. Secret is the lard (the oil they cook with), pork fat (bak poh), prawn shell and pork bone stock and of course, MSG. The look of it is a far cry from what it tastes. Many people call chicken rice Singapore's national dish but I feel hokkien mee to me should be the national dish. Also, cha siew rice singapore style with that huge dollop of gravy is absolute comfort food too. Glad you found your cendol :)

Hi Thomas and Sheena. You're Singapore videos have turned up in my recommendations and I have subscribed to your channel. I've seen a lot of these dishes reviewed by people like Anthony Bordain, Mikey Chen and Mark Wiens but they all have an American influence. I really appreciate an Australian point of view as I understand Americans are much more attracted to sweetness than I am. As a side-note on Australia-Singapore relations, I understand Singaporeans really enjoy Milo. This makes me very happy.

Have you guys tried the Boon Lay Power nasi lemak? It's at Boon Lay Shopping Centre. The prata stall beside it have the best dhalcha with tetel (gravy with mutton fats) and the prata is crispy on the outside and soft on the inside. It's near to where I live. Also, try going to Ayer Rajah food centre they sell Indian style mee siam with muttons, satay, malay style chicken rice and ikan bakar. So yummy! My husband brought me there and I always want to go there ever since! 😄

You mean in Singapore? It’s very easy- buy a electronic pass which you can top up with money. Just swipe through and the amount gets deducted each time. We always just plan our journey on Google maps and it will tell you which station you should start at and where you will arrive to 😄

The bbq pork looked wonderful! When we raised pigs we found the meat where the leg connects to the body is close to pork belly quality... not much there but worth saving.

Chasing a Plate - Thomas & Sheena .....We made it a point to use everything we could out of respect for the life we took to feed the family... what we didn’t use for ourselves ,we used for pet food etc.....pig ears in some parts of the world is a main dish , with us they are dried in the oven and made into doggie treats! One thing I like when watching is that the people don’t waste anything! In the US much gets wasted .

Completely agree with this ethos! It’s why we make sure we eat nose to tail when we travel and show those dishes. I think as meat eaters we have a responsibility to eat the whole animal- like you say, to respect the life that was taken. We ate so much offal recently in Italy- they are huge fans of nose to tail- hope you enjoy that upcoming series 😄

What’s also fantastic about Malaysia is that similar to Singapore there is a real variety in the cuisine- Malay, Chinese and Indian foods are all very well represented. Hi tongkat bebe, we don’t believe we are spreading fake information. Yes all of these food stalls are in hawker centres but they are street food dishes and many were at some point street food carts until they were moved into the hawker centres. The thing is when titling a video we need to appeal to what the average Joe would regard as street food. There are much less people searching for “hawker centres in Singapore” than “street food in Singapore” as the term hawker centre is pretty specific to just Singapore. As creators we need to appeal to the masses if we want more people to watch our video and unfortunately that can sometimes mean we can’t be technically correct. @@ChasingaPlate u r doing this as a living.. giving FALSE impression of local foods in general n restaurant foods [monk jump over the wall-sharks' fin soup] in particular..the local description is HAWKER CENTRES foods from hdb estates 2 chinatown to orchard road to geylang seri.. etc.. all covered centres/malls sell the same hawker foods.. but different prices .. from chicken rice to prata to fish head curries to chilli crabs to char kay tau to spring roll to hainanese rice to wanton tan noddles to royak...etc.. if u introduce singapore hawker foods instead of mandrain hotel hianese chicken rice.. say so... as well as define foods as cantonese, hakka, hockin n hianese-malay, indian, fusion... don't let the locals expose u don't understand local hawker foods... only guessing.
