Ms Mattie, that is a pot of yellow gold! I love fried corn so it was always something my me-ma would make whenever I visited her. This brought back many memories of hanging out with her in the kitchen… listening to her tell me what she was doing - like getting all the milk from the cob - sprinkled throughout our conversation as we caught up. Hi Mrs. Mattie. I’m attempting to cook 3 ears of corn your way. I’ve done it this way before but have had it as a child because my mom was a southern woman. My mom didn't use water . She used oil and stirred it constantly until it started to slightly turn brown it was delicious. Haven't had it since I was a kid . Will be making some tomorrow

I love fried corn. I like to add chopped onions and green peppers... It looks so good. I learned to fry it using fat back or Bacon fat when I was little, but now I make it just like you because I don't eat the pork any more.

I am a 74 yr old in Mississippi and corn is made in the cast iron skillet here with bacon fat we fry it til the sides of the skillet get sticky and gooy this affect came from the iron skillet. And only a bit of salt added and all other items that is added is same as your recipe. What state are you in. Wishing you a great week.
