Shucked and cooked a dozen ears the other day. I try to make 3 cuttings on my cobs and I scrape both up and down. I also use a small sharp carving knife to cut my corn, and I either add butter or bacon grease depending on how much grease I have.

I roast those corn cobs brown and add to my chicken or vegetable stock for great flavor...

I'm over in east alabama north of Auburn. Here, fried corn is done in the oven. My mom would add water and probably margerine. Not sure if it was here way or if it's routinely done around here. Guess that's more like creamed corn.

Yes you have to scrape the corn to get that good corn pulp and juice to make it juicy and creamy
