That turkey is georgeous! I have made whole or butterfly chicken and used compound butter of garlic, thyme,s and p,and zest of lemon. It was always a crowd pleaser. I never considered doing this method with turkey, and I never thought to melt the butter mixture and inject it with a meat syringe. Great recipe. Thanks so much.
