That was delicious! Siloe. I have to make some changes to my Choc Mousse since I do not have a Mixer; I put my Chia seeds in my Ninja blender with all the seeds because I could not strain the gel! But it came out good! Thanks!

😍😍😍 perfecto . This was a very educational video. Glad this was a vegan and free from, recipe. One to add to the back of our kitchen cupboard door (difficult to lose a kitchen door, quicker way to find recipes lol) . saving recipes in the back of cabinet door is a great tip! If you try to do this I would recommed using aquafaba (that is the water from a can of cooked chickpeas) instead of the flaxseed gel. It fluffs up much easier and holds its shape way better. I will have to eventually do an updated recipe.

Lovely! Have you made coconut milk with young coconut? It is very nice from young coconut. I've made it from scratch, but you are right - it's good BUT it takes time! I use coconut milk all the time so I always have a shelf stocked full of canned (I use about 1/2 gallon a month). :)

Now that was quite a production ! Thank you for focusing on the traditional way of preparing the many ingredients. We too use cans when we have too but if time is available we prefer to extract the ingredients from the whole foot be it fruit or vegetable. Love the raw sugar touch ! We use a similar style from the Philippines that my wife introduced me to and it is the type of sweet I prefer over refined sugar. I will again be sharing this with my wife and daughter tonight so that the hint can be executed :-)

Lolita's Garden Thanks Ian. I came up with this recipe by combining two concepts I had seen elsewhere, the flaxseed foam and the coconut vegan chocolate mousse. After some trial and error, it worked. And its not everyday that you get to use carpentry tools in the kitchen :-) The same sugar bowls is probably definitive proof that we may be long lost brothers (or cousins at least) How else could you explain that :-) Abs.

i used a goya can 3 teaspoons of sugar. i have the panela could find it. I used 6 teaspoons of chia. and a lindt 70% chocolate bar. it was prolly the chocolate and and the amount of chia that made it dense. It still tasted good

Chia does not work exactly the same and I don't know if you can strain off the gelatinous substance that it creates when chilled over night compared to boiling out the flax seed. You could always just give it a try if you haven't already and then you have your own recipe.

You are right. I have tried this with aquafaba and it work way better. It is much easier to get it right and simpler to make. It tends to hold the bubbles better also. So I suggest using the aquafaba. I had developed this recipe before the aquafaba craze, so I would not have known.

That looks awesome. Have you ever made it with Carob instead of cocoa? If not - would you? *smiles* I love Carob as a chocolate replacement. Either way will have to try this as my son loves chocolate pudding (or mousse) and I have issues with conventionally farmed chicken eggs. If the eggs are from free range chickens then I am okay. I don't buy them often though due to the much higher price. - Heidi

In Hawaii, they eat coconuts while still green. The meat is eaten with a spoon and has a texture like a firm yogurt. They cringe at the "over-ripe" coconut "bricks" sold on the mainland US. 😄

And speaking of coconuts, I was having a low potassium issue about a year ago. Very dangerous. The only thing that raised my levels back up was drinking coconut water. 👍

Have you tried a coconut scraper? Like these -> www.amazon.com/Coconut-Scraper-Shredder-Operated-Rotating/dp/B00WJ5161Q You hold each half, with the meat side facing the blade, and turn the handle to scrape out the meat. Its faster and so much easier. You can scrape only the white portion or scrape the shell clean as required. You can store the scraped out meat (will be like grated) in the freezer. Also, I find using warm water helps with getting thicker milk. I know this is an older video, but I do hope you see this comment :)

Seems like a great tool. If I lived in a place that produced coconuts I would definitely use. By the way I have changed this recipe and now use aquafaba (the liquid from a can of chickpeas) instead of the flaxseed gel. It works so much better and is way easier to do.

that is true I suppose. It is all semantics. When I recorded the video I was still inventing the recipe, afterwards, I made it a few times and adjusted the recipe to get a fluffier consistency, The ratios I speak in the video reflect that edit. So what appears on screen is a bit more of a pudding consistency than what the spoken recipe comes out as. It is a lower fat recipe and soy free for those allergic to soy or who want a lower fat option.
